This quick and easy Vegan Carrot Raisin Salad is a sweet and tangy side dish for any meal.

Not only can this salad be served during the holidays, it’s a wonderful cold salad to serve during the hot summer days.

There is something about the sweet yet slightly tart raisin paired with the sweet earthy flavor of a carrot that is so good.

Add in a creamy dressing and you have a fresh and healthy salad.

And because this is such a simply easy recipe, why not change up the ingredients every once in a while.

Here are just a few way’s to experiment.

Replace the raisins with dried currents, cranberries, or blueberries.

Add in a few chopped apples or pineapple.

Try adding sliced or chopped nuts, such as almonds, walnuts, or pecans.

Have fun and experiment with this salad each time you make it.

Vegan Carrot and Raisin Salad

Ingredients for this salad

  • Carrots – With this salad I used the larger sized carrots to make it easier to cut into ribbons. If you do not want to cut the carrots into ribbons, try shredding the carrots.
  • Raisins – You can use regular, golden, green, red raisins, or currants. Don’t have or like raisins, no problem. Switch out the raisin for dried cranberries or dried blueberries.
  • Vegan Mayonnaise – Use your favorite vegan mayo, or make your own.
  • Apple Cider Vinegar – This adds a little sour and tangy flavor to the dressing.
  • Real Maple Syrup – My sweetener of choice is the caramel/toffee flavor of real maple syrup.
  • Salt – Added to enhance the other flavors in this salad.

Optional additions

  • Fruit – Chopped apples or pineapple.
  • Nuts – Chopped almonds, walnuts, or pecans.

How to make a Vegan Carrot Raisin Salad

Clean and peel the carrots.

Next, shred or ribbon the carrots and place into a large mixing bowl.

In a smaller mixing bowl, mix together the vinegar, mayo, maple syrup, and salt.

Add the raisins to the dressing and stir until all the raisins are covered completely.

If adding any of the optional ingredients, add them to the dressing before pouring over the carrots.

Pour the dressing onto the carrots and toss until all the carrots are covered.

Cover the bowl and place in the refrigerator for at least an hour before serving.

After an hour or when ready to serve, remove from the refrigerator and stir before serving.

Ingredients
  

  • 4 to 6 Large Carrots
  • 2/3 Cups Raisins Any variety, I used the regular raisin.
  • 1 1/2 Tbsp Apple Cider Vinegar
  • 3/4 Cup Vegan Mayo
  • 1 1/2 Tbsp Real Maple Syrup
  • 1/4 tsp Salt

Optional Ingredients

  • Chopped Pineapple or Apples Add as much as you like.
  • Chopped Almonds, Walnuts, or Pecans Add as much as you like.
  • Dried Blueberries, Currents, or Cranberries Add as much as you like.
