Vegan Carrot Raisin Salad

This quick and easy Vegan Carrot Raisin Salad is a sweet and tangy side dish for any meal.

Ingredients
  

  • 4 to 6 Large Carrots
  • 2/3 Cups Raisins Any variety, I used the regular raisin.
  • 1 1/2 Tbsp Apple Cider Vinegar
  • 3/4 Cup Vegan Mayo
  • 1 1/2 Tbsp Real Maple Syrup
  • 1/4 tsp Salt
Optional Ingredients
  • Chopped Pineapple or Apples Add as much as you like.
  • Chopped Almonds, Walnuts, or Pecans Add as much as you like.
  • Dried Blueberries, Currents, or Cranberries Add as much as you like.

Method
 

  1. Clean and peel the carrots.
  2. Next, shred or ribbon the carrots and place into a large mixing bowl.
  3. In a smaller mixing bowl, mix together the vinegar, mayo, maple syrup, and salt.
  4. Add the raisins to the dressing and stir until all the raisins are covered completely.
  5. If adding any of the optional ingredients, add them to the dressing before pouring over the carrots.
  6. Pour the dressing onto the carrots and toss until all the carrots are covered.
  7. Cover the bowl and place in the refrigerator for at least an hour before serving.
  8. After an hour or when ready to serve, remove from the refrigerator and stir before serving.
