Vegan Carrot Raisin Salad

This quick and easy Vegan Carrot Raisin Salad is a sweet and tangy side dish for any meal.

Ingredients
  

  • 4 to 6 Large Carrots
  • 2/3 Cups Raisins Any variety, I used the regular raisin.
  • 1 1/2 Tbsp Apple Cider Vinegar
  • 3/4 Cup Vegan Mayo
  • 1 1/2 Tbsp Real Maple Syrup
  • 1/4 tsp Salt

Optional Ingredients

  • Chopped Pineapple or Apples Add as much as you like.
  • Chopped Almonds, Walnuts, or Pecans Add as much as you like.
  • Dried Blueberries, Currents, or Cranberries Add as much as you like.

Instructions
 

  • Clean and peel the carrots.
  • Next, shred or ribbon the carrots and place into a large mixing bowl.
  • In a smaller mixing bowl, mix together the vinegar, mayo, maple syrup, and salt.
  • Add the raisins to the dressing and stir until all the raisins are covered completely.
  • If adding any of the optional ingredients, add them to the dressing before pouring over the carrots.
  • Pour the dressing onto the carrots and toss until all the carrots are covered.
  • Cover the bowl and place in the refrigerator for at least an hour before serving.
  • After an hour or when ready to serve, remove from the refrigerator and stir before serving.
