Garlic Mustard Maple Asparagus

These easy and delicious Garlic Mustard Maple Asparagus make a perfect Spring side dish!

Personally, I was never a huge fan of asparagus, and neither was my husband.

Asparagus has a distinctive strong taste, at least the ones we have had.

So I wanted to cut that strong green taste with the perfect sauce, but not take away all the flavor completely.

And to my surprise, it really wasn’t to hard to create this perfect sauce!

This slightly sweet mustard sauce drizzled on top compliments the asparagus perfectly!

We always cooked the asparagus in water on the stove top and I believe this is what brings out the stronger green taste we dislike.

So I tried baking the asparagus instead, and this turned out so much better!

Baking the asparagus adds a whole new level of taste and texture, a tender yet crunchy perfection!

What makes this side dish even better is how easy it is to prep and how fast it takes to cook up and serve.

A total of 30 minutes and you have the perfect side dish to your meal!

Garlic Mustard Maple Asparagus

Ingredients for the roasted asparagus

  • Asparagus – Asparagus is a perennial flowering plant, it’s season is the spring, starting around late February and goes until June. The peak months are in April and through May. The flavor of asparagus to me is an earthy, bitter taste. But there are different varieties that can have a slightly different flavor.
  • Oil – The oils that I have tried are olive and avocado. This can be your favorite oil of choice.
  • Real Maple Syrup – Adding maple syrup to asparagus will add a sweet hint of caramel and vanilla that compliment the mustard and the vegetable.
  • Mustard – In this recipe I used a yellow mustard, I love the simple tart flavor of the plain yellow mustard. There are other varieties of mustard that would work wonderfully with this vegetable, such as a beer, dijon, spicy, whole grain, and hot mustard.
  • Minced Garlic – I love garlic and so this had to be added to my dish, this can be optional.
  • Seasonings – Salt and pepper to taste.

How to make these Garlic Mustard Maple Asparagus

Preheat oven to 425° F, line a baking sheet with parchment paper, and set aside.

Clean and cut or snap off about 2 inches of the stem ends of the asparagus.

Arrange a single layer of asparagus onto the lined baking sheet.

In a small bowl, mix together, the oil, maple syrup, garlic, mustard, salt, and pepper.

Drizzle the sauce over the asparagus, and roll the vegetables so they are coated completely and evenly.

Place the baking sheet into the oven and bake for 10 to 15 minutes or until the asparagus is soft.

Once they are soft, remove from the oven and serve.

  • 2 Tbsp Oil Olive or Avocado Oil
  • 1 Tbsp Real Maple Syrup
  • 1 Tbsp Mustard I used a plain yellow mustard, use your favorite mustard.

  • 1 lb. Fresh Asparagus
