This Spinach and Hummus Pasta was such a pleasant surprise.

I have always loved the taste of hummus, it’s good on just about anything, so it really shouldn’t be a surprise that it goes great with pasta.

If you are a hummus lover too, you will fall in love with this easy, quick, flavorful, and creamy alternative to pasta sauce.

Each time you make this dish, try the many varieties of hummus or why not make your own!

I also like to add different vegetables each time I make this, in this recipe I added spinach, onions, and mushrooms.

Other vegetables that I have tried are sauteed bell peppers, sun dried tomatoes, and/or steamed broccoli.

There really is no limit to what you can add to this Spinach and Hummus Pasta!

Pasta with Hummus

Ingredients for this pasta

  • Spinach – Fresh or frozen spinach.
  • Onion – A fresh sweet onion or onion powder will work in this dish. I like to saute a fresh onion and also use a little powdered onion for added flavor.
  • Garlic – Minced or powdered garlic are used in this dish.
  • Mushrooms – Fresh mushrooms are the only way to go. Don’t use canned or frozen mushrooms. Some of my favorites are portobello, crimini, white button, or shiitake mushrooms.
  • Hummus – Any flavor of hummus works great with pasta. I love the roasted red pepper, roasted garlic, and the everything hummus. Or why not make your own hummus to add to the pasta.
  • Pasta – Any variety of pasta ( I used a gluten free pasta ) and most shapes will work in this dish, pick your favorite.
  • Oil – I like to use avocado or olive oil in this dish.
  • Seasonings – Italian seasoning, salt, and pepper to taste.

How to make a Spinach and Hummus Pasta

Make the pasta of your choice to the package directions.

Once done, drain, and return the pasta to the pot, placing a lid onto the pot to keep the pasta warm.

Next clean and slice the onion and mushrooms.

In a large skillet, on a medium high heat, add the oil, onion, and mushrooms.

Saute for about 5 to 7 minutes, or until your desired tenderness.

Continue by adding the salt, pepper, Italian seasoning, and garlic to the sauteed vegetables and cook for a couple minutes.

Next add the spinach to the skillet and cook for an additional 5 to 10 minutes.

Remove the skillet from the heat and add the hummus.

Continue by stirring until everything is well coated with the hummus, cover, and set aside for 5 to 7 minutes.

After the 7 minutes, add the sauce to the pot of pasta and stir to cover, then serve.

Serve your pasta with a dollop of vegan sour cream, cheese, aioli, or with a little avocado oil drizzled on top.

  • 2 1/2 Cup Frozen or Fresh Spinach

  • 1 1/2 Cup Your favorite Hummus
  • 1/2 tsp Italian Seasoning
  • 1 Tbsp Oil Avocado or olive oil.
  • Salt and Pepper to taste
  • Pasta of your choice I used a gluten free pasta.
