Spinach and Hummus Pasta

Ingredients
  

  • 2 1/2 Cup Frozen or Fresh Spinach
  • 1 small Onion Or 1 Tbsp Onion Powder.
  • 1 tsp Minced Garlic Or garlic powder.
  • 1 8 oz. tub Fresh Mushrooms Portobello, white button, chimini, or shiitake.
  • 1 1/2 Cup Your favorite Hummus
  • 1/2 tsp Italian Seasoning
  • 1 Tbsp Oil Avocado or olive oil.
  • Salt and Pepper to taste
  • Pasta of your choice I used a gluten free pasta.

Instructions
 

  • Make the pasta of your choice to the package directions.
  • Once done, drain, and return the pasta to the pot, placing a lid onto the pot to keep the pasta warm.
  • Next clean and slice the onion and mushrooms.
  • In a large skillet, on a medium high heat, add the oil, onion, and mushrooms.
  • Saute for about 5 to 7 minutes, or until your desired tenderness.
  • Continue by adding the salt, pepper, Italian seasoning, and garlic to the sauteed vegetables and cook for a couple minutes.
  • Next add the spinach to the skillet and cook for an additional 5 to 10 minutes.
  • Remove the skillet from the heat and add the hummus.
  • Continue by stirring until everything is well coated with the hummus, cover, and set aside for 5 to 7 minutes.
  • After the 7 minutes, add the sauce to the pot of pasta and stir to cover, then serve.
  • Serve your pasta with a dollop of vegan sour cream, cheese, aioli, or with a little avocado oil drizzled on top.
