A Sauteed Peach Salad that is so easy and simply just so irresistible!

Sweet and tender peaches sauteed with shallots, topped on a fresh green salad, and drizzled with a simple homemade sweet vinaigrette.

And with summer in full swing, what a perfect light, refreshing, and tasty fast meal or side dish for those hot days.

When I thought of making this salad, normally I would just slice up fresh ripe peaches on top of the green leafy lettuce and enjoy.

But sometimes the peaches are not that ripe or you just want something a little different.

One way is to grill the slices, but being that I don’t own a grill, this was not a option for me.

So I thought I would experiment with sauteing the slices with a fresh shallot, and am I happy with this decision, YUM!

I love that you can caramelize the onion or shallot with the peaches, giving a very different taste than just grilling the slices on a grill.

What to garnish this salad with?

Optional

  • Nut of choice – Slivered almonds, candied pecans or walnuts, or cashews
  • Dried Fruits – Cranberries, strawberries, blueberries, or currents
  • Vegan Cheeses – A vegan feta would be the best option for this salad

Ingredients needed for this salad

  • Salad Greens – A green leaf blend of lettuce of your choice.
  • Peaches – Fresh peaches work the best for this recipe.
  • Oil – The oil is used to saute the peaches, I used a avocado oil, use your favorite oil.
  • Shallots – I added the mild shallot while sauteing the peaches, this is optional.

Ingredients needed for the dressing

  • Oil – I used the mild buttery flavored avocado oil for this dressing.
  • Balsamic Vinegar – This tart, tangy and slightly sweet vinegar pairs well with the peaches.
  • Lemon Juice – The lemon juice brightens the dressing with it’s citrusy flavor.
  • Maple Syrup – The sweetener of choice is the maple syrup adding a just a hint of a caramel and vanilla flavor to the dressing.
  • Salt and Pepper – To taste.

How to make this Sauteed Peach Salad

Wash, dry and place into a salad bowl the fresh lettuce.

Clean and slice the shallot and peaches, set aside.

In a medium sized skillet, on medium high heat, add the oil, sliced peaches, shallot and sauteed until slightly caramelized, about 10 minutes.

While the peaches are sauteing, combine the ingredients for the dressing, the oil, lemon juice, balsamic vinegar, maple syrup, salt, pepper and set aside.

Once the peaches are done, add to each bowl of lettuce.

Mix the dressing and drizzle on top of the peaches.

Ingredients
  

Salad

  • 3 to 4 Peaches
  • 6 Cups Greens This can be a mix of different greens, spinach, or just a green leaf lettuce.
  • Oil To saute the peaches and shallot
  • 1 Tbsp Shallot Optional.

Dressing

  • 1/4 Cup Oil I used avocado oil.
  • 2 Tbsp Balsamic Vinegar
  • 1 tsp Lemon Juice
  • 1 Tbsp Real Maple Syrup
  • Salt and Pepper to taste.
