Method
- Wash, dry and place into a salad bowl the fresh lettuce.
- Clean and slice the shallot and peaches, set aside.
- In a medium sized skillet, on medium high heat, add the oil, sliced peaches, shallot and sauteed until slightly caramelized, about 10 minutes.
- While the peaches are sauteing, combine the ingredients for the dressing, the oil, lemon juice, balsamic vinegar, maple syrup, salt, pepper and set aside.
- Once the peaches are done, add to each bowl of lettuce.
- Mix the dressing and drizzle on top of the peaches.
- Garnish with a nut of choice, dried fruit and a vegan feta cheese, ENJOY!

What to garnish the salad with?

- Nut of choice - Slivered almonds, candied pecans or walnuts, or cashews

- Dried Fruits - Cranberries, strawberries, blueberries, or currents

- Vegan Cheeses - A feta would be the best option for this salad
