A light and refreshing meal for those hot summer days with sauteed peaches and shallots on top of a fresh green salad, drizzled with a simple homemade dressing.

Ingredients
  

Salad

  • 3 to 4 Peaches
  • 6 Cups Greens This can be a mix of different greens, spinach, or just a green leaf lettuce.
  • Oil To saute the peaches and shallot
  • 1 Tbsp Shallot Optional.

Dressing

  • 1/4 Cup Oil I used avocado oil.
  • 2 Tbsp Balsamic Vinegar
  • 1 tsp Lemon Juice
  • 1 Tbsp Real Maple Syrup
  • Salt and Pepper to taste.

Instructions
 

  • Wash, dry and place into a salad bowl the fresh lettuce.
  • Clean and slice the shallot and peaches, set aside.
  • In a medium sized skillet, on medium high heat, add the oil, sliced peaches, shallot and sauteed until slightly caramelized, about 10 minutes.
  • While the peaches are sauteing, combine the ingredients for the dressing, the oil, lemon juice, balsamic vinegar, maple syrup, salt, pepper and set aside.
  • Once the peaches are done, add to each bowl of lettuce.
  • Mix the dressing and drizzle on top of the peaches.
  • Garnish with a nut of choice, dried fruit and a vegan feta cheese, ENJOY!

Notes

What to garnish the salad with?
    • Nut of choice - Slivered almonds, candied pecans or walnuts, or cashews
    • Dried Fruits - Cranberries, strawberries, blueberries, or currents
    • Vegan Cheeses - A feta would be the best option for this salad
