Sauteed Peach Salad

A light and refreshing meal for those hot summer days with sauteed peaches and shallots on top of a fresh green salad, drizzled with a simple homemade dressing.

- 3 to 4 Peaches
- 6 Cups Greens This can be a mix of different greens, spinach, or just a green leaf lettuce.
- Oil To saute the peaches and shallot
- 1 Tbsp Shallot Optional.
Dressing
- 1/4 Cup Oil I used avocado oil.
- 2 Tbsp Balsamic Vinegar
- 1 tsp Lemon Juice
- 1 Tbsp Real Maple Syrup
- Salt and Pepper to taste.
Wash, dry and place into a salad bowl the fresh lettuce.
Clean and slice the shallot and peaches, set aside.
In a medium sized skillet, on medium high heat, add the oil, sliced peaches, shallot and sauteed until slightly caramelized, about 10 minutes.
While the peaches are sauteing, combine the ingredients for the dressing, the oil, lemon juice, balsamic vinegar, maple syrup, salt, pepper and set aside.
Once the peaches are done, add to each bowl of lettuce.
Mix the dressing and drizzle on top of the peaches.
Garnish with a nut of choice, dried fruit and a vegan feta cheese, ENJOY!
What to garnish the salad with?

- Nut of choice - Slivered almonds, candied pecans or walnuts, or cashews

- Dried Fruits - Cranberries, strawberries, blueberries, or currents
