Sauteed Vegetables with Quinoa is one of my favorite fast and easy meals to make!

A dish that is not only simple but also full of color, flavor and can also be enjoyed two ways, as a side or main dish.

Personally I love it as a main dish because it’s quick and easy to make, just throw any leftover vegetables together in a pan, saute, add your spices, quinoa and you have a nutritional meal!

And because it can be served hot or cold, it’s perfect for any time of year.

This dish cooks up fast, taking about 30 minutes to make and that’s including making the quinoa!

You will love the caramelized flavor of the vegetables that are perfectly spiced with the quinoa.

It truly is a fast meal with little effort!

What Ingredients to use for this dish

  • Quinoa

Why I used quinoa with my sauteed vegetables? Quinoa is classified as a whole grain and is full of protein, fiber, and beneficial vitamins and minerals.

Because quinoa is full of all these nutrients, it keeps you satisfied and full for hours.

And let us not forget it is naturally gluten free!

  • Vegetables

    Zucchini and yellow squash are the vegetables I chose to use for this dish, but I have tried or will be trying other vegetables such as green beans, mushrooms, asparagus, peppers, onions and brussels sprouts. This dish can be customized with your favorites.

    • Seasonings

    I purposely kept the seasoning simple, using onion powder, minced garlic, salt and pepper.

    But there are many seasonings that will compliment your vegetables of choice, such as basil, dill, oregano, Italian Seasoning, rosemary, smoked paprika and red pepper flakes.

      How to make Sauteed Vegetables with Quinoa

      Rinse and cook the quinoa to the package directions.

      Once the quinoa is cooked, set aside.

      Clean and slice the squash and zucchini, set aside.

      In a medium sized frying pan, add oil to cover the bottom of the pan, toss in the vegetables.

      Heat on a medium high heat and saute until the vegetables start to brown.

      Stir in the seasonings of choice.

      Next, stir in the quinoa and cook for another 5 minutes.

      After 5 minutes, remove from heat and serve as a main or side dish.

      Ingredients
        

      • 1 Yellow Squash
      • 1 small Zucchini
      • 1 tsp Onion Powder
      • 1 tsp Minced Garlic
      • 1 Cup Cooked Quinoa
      • Salt and Pepper to taste

      Instructions
       

      • Rinse and cook the quinoa to the package directions.
