Sauteed Vegetables with Quinoa

A dish that is not only simple but also full of color, flavor and can also be enjoyed two ways, as a side or main dish.

- 1 Yellow Squash
- 1 small Zucchini
- 1 tsp Onion Powder
- 1 tsp Minced Garlic
- 1 Cup Cooked Quinoa
- Salt and Pepper to taste
Rinse and cook the quinoa to the package directions.
Once the quinoa is cooked, set aside.
Clean and slice the squash and zucchini, set aside.
In a medium sized frying pan, add oil to cover the bottom of the pan, toss in the vegetables.
Heat on a medium high heat and saute until the vegetables start to brown.
Stir in the seasonings of choice.
Next, stir in the quinoa and cook for another 5 minutes.
After 5 minutes, remove from heat and serve as a main or side dish.

green beans, mushrooms, asparagus, peppers, onions and brussels sprouts.

There are many seasonings that will compliment your vegetables of choice, such as basil, dill, oregano, Italian Seasoning, rosemary, smoked paprika and red pepper flakes.
