This is a healthy simple and Creamy Vegan Coleslaw that is not only great for summer, but is a great dish for the holiday’s as well.

What is Coleslaw?

Some know it as simply slaw, but it is a side dish of shredded raw cabbage with a dressing of either a vinaigrette or a mayonnaise base.

It is simply easy to make and it requires no cooking or baking and whips up in just a few minutes.

What type of cabbage works the best with a coleslaw?

This is more about what you can find at the stores and what color you like your slaw.

Most of the time you can find a white, green, or purple cabbage pretty much at any store today.

I personally love to mix my cabbage, but I am fine with what ever I can find.

There really is no rule for what cabbage is better than the other.

The sauce is what makes the coleslaw and it is so easy to whip up in just a few minutes!

There is only six ingredients in this simple creamy sauce.

This vegan sauce is lightly sweet from the maple syrup, with a hint of tang from the vinegar and mustard, poured over crisp and fresh carrots and cabbage.

What ingredients are needed for this coleslaw?

  • Cabbage – This can be any variety and/or any color you prefer for your slaw. Try a mix of purple and green/white cabbage for a little more color.
  • Carrots – The carrots add a little more crispness, color, and sweetness to the slaw.

The Dressing Ingredients

  • Apple Cider Vinegar – Apple cider vinegar is what I suggest to use in this recipe. It is a milder vinegar that adds a slight fruity taste with a tang.
  • Vegan Mayonnaise – Use your favorite mayo for the dressing. This will give the dressing a creamy consistency.
  • Real Maple Syrup – Maple syrup gives the dressing hints of caramel, vanilla, maple flavor with just the right amount of sweetness.
  • Mustard – In this recipe I used a plain yellow mustard, add your favorite for a different taste.
  • Seasonings – Celery seed, salt and pepper are added in this recipe.

How to make this Creamy Vegan Coleslaw

Clean and cut up the cabbage and place into a large serving bowl.

Clean and chop or julienne the carrots and place into the large bowl.

Set the large serving bowl aside.

In a small bowl add the dressing ingredients and whisk together.

Drizzle the dressing ingredients over the large serving bowl of carrots and cabbage and mix well.

Creamy Vegan Coleslaw

Cover the large serving bowl and place into the refrigerator for no less than a few hours or overnight. The longer the better.

Ingredients
  

  • 1 head Cabbage You can use half purple and green to make this slaw more colorful. Cut up and place in a large bowl.
  • 1 to 2 cup Carrots Chopped finely or julienne. The amount of carrots depends on how large the head of cabbage is.

Dressing

  • 2 Tbsp Organic Apple Cider Vinegar
  • 1 cup Vegan Mayo alternative
  • 1/4 cup Real Maple Syrup
  • 2 Tbsp Mustard I use yellow mustard.
  • 1 Tbsp Celery Seed
  • Salt and pepper to taste

Instructions
