This Healthy Vegetable Bake is easy, vegan, gluten free, and full of flavor!

In this bake, we have tender thinly sliced vegetables topped with chewy flavorful sauteed chickpeas, seasoning, and tomatoes baked to perfection.

What are some seasonings to use in this dish?

I like to keep it simple and just use salt and pepper.

But sometimes, it is nice to mix it up with different spices.

Suggestions of single spices are:

  • Rosemary
  • Thyme
  • Oregano
  • Basil
  • Dill
  • Sage
  • Red Pepper Flakes

There also is a few blends of seasonings that compliment this dish, such as:

  • Italian Seasoning
  • Herbes De Provence
  • Lemon Pepper
  • Or use your own herb blends

In this recipe I did not add any vegan cheese, but this is a option.

Sprinkle on the shredded cheese of your choice after uncovering the dish for the last 15 to 20 minutes in the oven.

But what I love, and you will too, about this dish is that it can be served as a side dish or main dish and can be enjoyed anytime of year!

What ingredients are in this bake?

  • Zucchini – A mild flavor summer squash. This low calorie vegetable is full of nutrients and a perfect addition to this dish.
  • Yellow Squash – The yellow squash has a mild flavor, but when baked or cooked the squash has a nice buttery flavor that compliments this dish.
  • Potatoes – In this recipe I used a red potato. I like to use red potatoes because they keep their shape when baked. Any other potato will work for this recipe, but stay away from the russet potato, they do not hold a shape once baked.
  • Garlic – Garlic cloves add a mild garlic flavor to this dish.
  • Onion – The onion of choice for this recipe was the shallot. A shallot is a less pungent onion, but stronger tasting than the leek. Can’t find shallots? Not a problem, try leeks or a regular onion.
  • Tomatoes – In this recipe I used grape sized tomatoes sprinkled on top before baking. These little sweeties intensify with flavor once baked and have a juicy jam like consistency that compliment this dish.
  • Chickpeas – This legume is one of my favorites! I use these in and on anything I can. So it is no surprise that I would add these to this dish. Chickpeas have a mild earthy buttery flavor that can be used in just about anything and will compliment the dish nicely.
  • Oil – Avocado oil or olive oil will work wonderfully in this dish.
  • Seasonings – Salt and pepper are the only seasonings I used, but you can add many different seasoning blends or any herb of choice.

How to make a Healthy Vegetable Bake

Preheat the oven to 425° F.

Grease a 8×8 baking dish with oil and set aside.

Rinse the can of chickpeas and set aside to drain.

Clean and dice the garlic cloves and onion.

In a medium sized skillet, add oil, garlic, onion and saute on a medium heat for about 8 minutes or until softened.

Add seasonings, chickpeas and saute for another 3 to 5 minutes or until the chickpeas start to crisp and slightly brown, once done set aside.

Clean and slice the zucchini, squash, potatoes and line them up in the baking dish.

Season the sliced vegetables with your seasoning of choice or just salt and pepper.

Pour the sauteed beans over the top of the vegetables, add the tomatoes and cover the dish with foil.

Place into the oven and bake for 30 minutes, remove the foil and bake for another 15 to 20 minutes.

The bake is done once the potatoes have softened.

Ingredients
  

  • 2 Small to medium sized Zucchini
  • 2 Small to medium sized Yellow Squash
  • 4 Medium sized Potatoes Red or yellow work the best.
  • 4 Whole Cloves Garlic
  • 1 Shallot
  • 1 Handful Grape Sized Tomatoes
  • 1 15 oz. Can Chickpeas
  • Salt and Pepper to taste.
