Healthy Vegetable Bake

In this bake is thinly sliced vegetables topped with chickpeas, seasoning of choice, tomatoes and baked to perfection.

  • 1 8x8 Baking Dish

Ingredients
  

  • 2 Small to medium sized Zucchini
  • 2 Small to medium sized Yellow Squash
  • 4 Medium sized Potatoes Red or yellow work the best.
  • 4 Whole Cloves Garlic
  • 1 Shallot
  • 1 Handful Grape Sized Tomatoes
  • 1 15 oz. Can Chickpeas
  • Salt and Pepper to taste.

Instructions
 

  • Preheat the oven to 425° F.
  • Grease a 8x8 baking dish with oil and set aside.
  • Rinse the can of chickpeas and set aside to drain.
  • Clean and dice the garlic cloves and onion.
  • In a medium sized skillet, add oil, garlic, onion and saute on a medium heat for about 8 minutes or until softened.
  • Add seasonings, chickpeas and saute for another 3 to 5 minutes or until the chickpeas start to crisp and slightly brown, once done set aside.
  • Clean and slice the zucchini, squash, potatoes and line them up in the baking dish.
  • Season the sliced vegetables with your seasoning of choice or just salt and pepper.
  • Pour the sauteed beans over the top of the vegetables, add the tomatoes and cover the dish with foil.
  • Place into the oven and bake for 30 minutes, remove the foil and bake for another 15 to 20 minutes.
  • The bake is done once the potatoes have softened.
  • Once the potatoes are soft, remove from the oven and serve immediately!
