These Baked Zucchini Fries are vegan, gluten free and surprisingly so easy to make!
You will fall in love with the crispy, flavorful outer coating that covers the fresh, tender zucchini.
And with the start of summer, we will soon have an abundant amount of this summer squash in our gardens.
I know that by the middle of summer, we all are adding zucchini to just about everything, just to keep up with the production.
So why not turn this squash into an easy and crispy treat!
These fries are perfect as a side dish to any meal or you can enjoy them as a healthy snack.
But what type of dipping sauce compliments these crispy fries?
Here are a few that my family enjoyed….
- Mixing ketchup and mustard together.
- Ranch dressing, try my Homemade Vegan Ranch Dip.
- Aioli, try these – Homemade Lemon Dill Aioli, Homemade Sriracha Aioli, Vegan Cilantro Lime Aioli, or the Sun Dried Tomato Basil Aioli.
- Salad Dressings as a dip, try these – Creamy Avocado Dressing, Vidalia Onion Dressing, Maple Mustard Dressing, Homemade Catalina Dressing, or the Vegan Thousand Island Dressing.
- A homemade or your favorite store bought marinara sauce.
Ingredients needed for these fries
- Zucchini – The zucchini is a summer squash with a mild flavor that is slightly sweet with a slight bitterness.
- Chickpea Flour – This flour is full of nutrients, protein, it is low in carbs with few calories. It has an earthy and pleasant nutty flavor that is naturally gluten free, making it appropriate for people with celiac disease, gluten intolerance and wheat allergies.
- Panko Breadcrumbs – In this recipe I used a gluten free panko breadcrumb.
- Masa Harina – Although this is the same consistency as an all purpose flour, it is made of corn, and a gluten free flour.
- Plant Based Milk – In this recipe I used a unsweetened plain almond milk. Pick your favorite plant based milk for this recipe.
- Egg Substitute – I used a powdered egg substitute for this recipe.
- Seasonings – Salt, pepper, minced garlic, onion powder, and smoked paprika for flavor.
How to make Baked Zucchini Fries
Preheat the oven to 450° F.
Line a baking sheet with parchment paper and set aside.
Wash and slice the zucchini into 3 inch long pieces and then into 1/2 inch thick spears.
Place all the zucchini spears and chickpea flour into a large bag or a container with a lid.
Cover or seal the bag and shake to coat all the spears.
In a small bowl, mix the egg substitute to the package direction and set aside.
Add the panko breadcrumbs to a medium sized mixing bowl with all the spices and mix until blended.
Next, dip each zucchini spear into the egg substitute, then in the breadcrumbs and arrange the covered spears onto the baking sheet.
Once all the spears are covered and placed on the baking sheet, place the baking sheet into the oven.
Bake the fries for 20 minutes, flip the fries and bake for about 10 more minutes or until they start to turn a golden brown.
After the fries are done, remove from the oven and serve hot.
Serve these Baked Zucchini Fries with your favorite dipping sauce.

- 3 small to medium Zucchini
- 1/4 Cup Chickpea Flour
- 4 Powdered Egg Substitute Equal to 4 eggs.
- 1/2 Cup Plant Based Milk I used a unsweetened plain almond milk.
- 1/2 Cup Panko Bread Crumbs
- 3 Tbsp Masa Harina
- 1 tsp Minced Garlic
- 2 tsp Onion Powder
- 1/4 tsp Ground Pepper
- 1 tsp Salt
- 1/2 tsp Smoked Paprika
Instructions
