Why order out potato wedges when you can easily make your own Homemade Potato Wedges!
These chunky fries are tender yet firm with crispy edges, great for dipping!
They are healthier and taste much better than the greasy potato wedges you get at the restaurant and are so simple to make.
So quick to prepare with any seasoning of choice and baked in the oven.
And just like any potato, they make for a perfect side dish to any meal!
What kind of potato works best for these fries?
I like to use a red potato for these fries.
The red potato has a delicate skin that can be peeled or left on.
What I like about this potato is that once it is cooked it will keep it’s shape and not fall apart when you are dipping the fries into your dipping sauce.
Another potato that would work for these fries is the Yukon Gold, it is very similar to the red potato in texture.
But the one potato that I stay away from is the russet.
I know everywhere I have read says that this is the perfect potato for baking and frying, I disagree.
It might be perfect for baking, because of the thick skin coating that helps to bake the inside fluffy.
But it is not ideal for fries, because of this very same reason.
The fry does not hold up to the thick dipping sauces that we all love.
What oil to use for these potatoes wedges?
I personally love using avocado oil, but will also use a good olive oil too.
The avocado oil has a mild delicate taste with a slight buttery flavor like the avocado.
Olive oil can vary in taste, it can have a fruity, bitter or peppery taste.
As you can see there is a difference between these two oils as regards to taste.
Don’t like these oils? That is not a problem, pick your favorite oil to use for these potatoes.
Seasoning your Homemade Potato Wedges
The seasoning is how you can customize your fries for you and your family.
I love to switch it up from time to time, using blended spices, individual spices and also made it super simple with just salt and pepper.
Here are just a few of my favorite spices I have used:
- Onion Powder
- Garlic Powder
- Italian Seasoning
- Ground Rosemary
- Lemon Pepper
- Smoked Paprika
How to make Homemade Potato Wedges
Preheat the oven to 450° F.
Prepare a large baking sheet with parchment paper and set aside.
Clean and slice the potatoes into wedges.
Place the sliced potatoes into a medium sized mixing bowl, pour the oil over the potatoes.
Stir until the potatoes are covered.
Sprinkle the salt and pepper (and any spices of your choice) over the potatoes and stir.
Pour the potatoes onto the baking sheet and spread out evenly in one layer.
Place in the oven for 20 minutes.
At 20 minutes, stir and flip the potatoes and place the baking sheet back into the oven for another 20 minutes.
After the 20 minutes, the potatoes should be crisp and browned, if not return to the oven and continue baking for another 10 minutes until crispy and brown to your liking.
Once the potatoes are done, remove from the oven and serve hot with your favorite dipping sauces.

- 3 lbs. Potatoes I like to use red potatoes.
