These Homemade Vegan Sausages are simple to make, gluten free, use simple and inexpensive ingredients, and are packed full of flavor!

This recipe taste like a mild Italian sausage, making these perfect for breakfast and dinner.

No tofu was used in this recipe, just spices, rice, oats, quinoa, all wrapped in rice paper, making a sausage.

What I love most about these sausages is that you can customize them any way you like.

You don’t have to roll this sausage stuffing into rice paper, just saute in a little oil.

Use the stuffing in another recipe as a crumble or add it on top of buttered toast topped with ketchup and mustard.

In this recipe I roasted the sausages in the oven ( which I prefer ), but I also have sauteed them in oil on top of the stove.

These sausages are easy to make, can be made ahead of time, and froze for a quick meal.

So don’t waste your money on buying those premade vegan sausages that are filled with ingredients you can’t even pronounce, make your own!

Homemade Vegan Sausages

Ingredients for the sausages

Saute together

  • Pepper – I used a bell pepper in my sausage. Add your favorite peppers for a different flavor each time you make these.
  • Onion – A sweet onion was my onion of choice. You can use a powdered or dried minced onion. Onion is optional.
  • Garlic – Fresh, minced, or powdered garlic can be used, but is optional.

Sausage Filling

  • Soy Sauce or Liquid Aminos – These will add a umami flavor with a salty sweet taste that is common with sausages.
  • Flour – I used a chickpea flour in my sausages. Alternatives that I have used are a gluten free flour ( King Author measure four measure gluten free flour ) and oat flour. This can be any flour of your choice. Chickpea flour has a slight earthy flavor to it which compliments the sausage. This flour also adds more protein and fiber to the homemade sausage, which helps to keep you fuller longer.
  • Oats – You can use old fashioned, quick or an instant oat. Do not use the steel cut oats in these sausages.
  • Rice – Any cooked rice works well in this recipe. I have used a brown rice but my favorite is the basmati rice.
  • Quinoa – This naturally gluten free super food adds more nutritional value, is rich in protein and fiber. Cook the quinoa to the package direction before adding.
  • Real Maple Syrup – Using maple syrup in this recipe adds a sweet smokey earthy flavor to the sausage as well as enhancing the other ingredients.
  • Rice Paper – Rice paper keeps the sausages together.
  • Oil – Avocado or olive oil used to saute the onion, peppers, and garlic together. I also added Sesame oil to the sausages for a slight earthy and nutty flavor.
  • Seasonings – I used Italian seasoning, minced or ground garlic, ground fennel, ground sage, smoked paprika, salt, and pepper.
  • Water

How to make Homemade Vegan Sausages

Preheat the oven to 450° F.

Prepare a baking sheet with parchment paper, drizzle with oil, (the oil is to roll the sausages in) and set aside.

Cook the quinoa and rice of choice to the package direction, once done, set aside.

Clean and dice the pepper, onion, and garlic (if using fresh garlic) into to small pieces.

In a medium sized skillet add oil, pepper, onion, and garlic (minced or fresh garlic), saute until the onion is soft.

Remove from the heat and set aside.

Next, in a medium sized sauce pan add the water, flour, seasonings, sesame oil, and maple syrup, blend until combined, making sure there are no lumps.

Then stir in the sauteed vegetables.

Bring everything to a boil, then stir in the oats.

Turn the heat down to low and continue cooking for 2 to 3 minutes.

Add the cooked rice, cooked quinoa, and stir until well combined.

Remove from the heat, set aside.

Assembling the vegan sausages

Grab a large dinner plate and a sheet of rice paper, rinse the rice paper with warm water on both sides to soften.

Lay the rice paper on the large dinner plate, add about a 1/2 cup of sausage filling to the middle.

Roll the rice paper into a cylinder shade, then twist the ends to close.

Or roll the rice paper as you would a burrito, tucking in the sides as your roll.

Place the rolled sausage onto the oiled parchment paper and roll it in the oil to cover it completely.

Continue rolling the sausages until the filling is gone.

Homemade Vegan Sausages

Place the prepared sausages into the oven for 10 minutes.

After 10 minutes, remove the baking sheet from the oven to flip the sausages.

Return to the oven for about 10 minutes or until they are a golden brown.

After the sausages have become a golden brown, remove from the oven.

  • 1 Sweet Onion Can use 2 to 4 Tbsp of dried or minced onion. Optional.
  • 1 tsp Minced garlic Can use 1 clove of fresh or 1 tsp of dried garlic. Optional.
  • Oil Enough to saute the above vegetables. Can use olive or avocado oil.

Filling

  • 2 Cups Water
  • 2 Tbsp Liquid Aminos Or can use soy sauce.
  • 2/3 Cup Chickpea Flour
  • 1 tsp Italian Seasoning
  • 1 tsp Minced garlic Or powdered garlic.
  • 1/2 tsp Ground Fennel
  • 1/2 tsp Ground Sage
  • 1/2 tsp Smoked Paprika
  • 1 tsp Real Maple Syrup
  • 1/2 tsp Sesame Oil
  • 1 tsp Salt
  • 1/4 tsp Ground Pepper
  • 1 Cup Cooked Rice
  • 1 Cup Cooked Quinoa
  • 1 1/4 Cup Oats Quick, old fashioned, or instant oats.
  • 8 Round Rice Paper Sheets

Notes

These sausages can be made ahead of time and frozen for later.
You don’t have to roll this into sausages, omit the rice paper and use the filling in a recipe as a crumble.
Or you can enjoy the filling on a piece of buttered toast topped with ketchup and mustard.
