These Sweet Potato Lentil Sloppy Joes are full of flavor and protein!

A simply easy dish that uses simple ingredients, and is ready to enjoy in about 45 minutes.

Made with rich lentils and tender sweet potatoes, these sloppy joes are full of protein, fiber, packed with vitamins, and minerals.

These sloppy joes are healthy, filling, delicious, and so versatile!

My family enjoys this sandwich filling in many different ways.

Not just as a sandwich on a delicious bun, but also on a bed of rice, topped with dill pickles.

It also will compliment spaghetti or any pasta as a topping.

My favorite is in a bowl with a freshly sliced avocado, vegan cheese, and/or a homemade aioli.

Sweet Potato Lentil Sloppy Joes

Ingredients for the Sloppy Joes

  • Lentils – In this recipe I used a brown/green lentil. These common lentils hold their shape when cooked and have a mild earthy flavor that will take on the other flavors in the dish.
  • Onion – I used a fresh sweet onion in my Sloppy Joes, this is optional. Don’t have a fresh onion? Use a powdered onion in it’s place.
  • Tomatoes – I used both tomato sauce and diced tomatoes in these Sloppy Joes.
  • Garlic – Minced garlic is my garlic of choice, but a garlic powder will work just as well.
  • Mustard – I like to use a yellow mustard in Sloppy Joes, adding just a little tang to the dish. Any variety of mustard can be used, chose your favorite.
  • Sweet Potatoes – A sweet potato or yam can be used in these Sloppy Joes.
  • Real Maple Syrup – Only use real maple syrup in this dish. It adds a sweet, smokey, caramel flavor to the Sloppy Joes.
  • Sriracha – This sweet, yet tangy sauce add just the perfect amount of a mild heat to this sandwich.
  • Seasonings – Smoked Paprika, Salt, and Pepper to taste.

How to make Sweet Potato Lentil Sloppy Joes

Rinse and drain the lentils.

Add water to a medium sized saucepan and pour in the rinsed lentils.

Cook at a medium high heat, to a boil, turn heat down to a medium low and let simmer until tender.

Once the lentils are done, remove from heat.

While the lentils are cooking, add enough oil to cover the bottom of a 12 inch skillet.

Clean and dice the onion and sweet potato into bite sized pieces, add to the oiled skillet.

Add in the garlic and cook at a medium heat, stirring frequently until the sweet potatoes are tender.

Once done, turn down to a low heat and season the potatoes with the smoked paprika, salt, pepper, and stir until well combined.

Pour in the tomato sauce, diced tomatoes, mustard, sriracha, maple syrup, and continue to cook at a low heat.

Next, drain any extra liquid from the cooked lentils before adding to the skillet of sweet potatoes.

Stir until everything is combined, turn off the heat, and serve.

Serve your Sloppy Joes on a bun with your favorite vegan cheese and pickles or top a bed of rice with sliced avocado.

  • 2 Cups Water This is to cook the lentils in.
  • 1 Cup Lentils Brown/Green lentils work the best.
  • 1 Fresh Onion You can also use powdered or minced onion.
  • 1 Tbsp Minced Garlic 3 fresh garlic cloves or garlic powder can be used.
  • 1 to 1 1/2 lbs. Sweet Potatoes or Yams This is about 2 to 3 cups of sweet potatoes.
  • 1 Tbsp Yellow Mustard Any variety of mustard will work.
  • 1 15oz. Can Diced Tomatoes
  • 1 Cup Tomato Sauce
  • 2 Tbsp Real Maple Syrup
  • 1 tsp Smoked Paprika
  • 1 tsp Sriracha
  • Salt and Pepper to taste.
