This Vegan Apple Pie Bar is a old family favorite, one of my mom’s wonderful recipes that she handed down to me.

These bars where always popular at our family gatherings every year and it is the most requested.

And why not, it is so much easier to serve a crowd of people with bars, rather than a small pie.

The bar taste just like a pie, it has juicy apples with a crispy crust, and drizzled with a sweet light frosting.

We have always use a blend of fresh apples with frozen apples as the filling, never a apple pie filling.

This is the best way to control the sweetness of this mouthwatering dessert.

When serving these bars, add a dollop of your favorite whipped topping, or a scoop of ice cream.

But my favorite is just as it is, plain, nothing on top and with a hot cup of coffee.

Vegan Apple Pie Bar

Ingredients for these bars

Bars

  • Flour – A all purpose flour was used in this bar.
  • Margarine – Your favorite vegan margarine of choice.
  • Oil – In this recipe I have used olive and avocado oil.
  • Sugar – A pure cane sugar was to sweeten the dough.
  • Salt – Salt enhances the flavors of the other ingredients.
  • Water – Use cold water only in the crust. This help to keep the fat from melting to quickly and slows down the development of gluten. Using cold water will give you a delicate textured crust.
  • Cinnamon – Ground cinnamon was used enhance the flavor of the crust.
  • Apples – Any variety of apple works great in this recipe. But do not use a premade pie filling, use only fresh or frozen apples for the filling in these bars.

Frosting

  • Powdered Sugar – The sweetener of choice is the powdered sugar. Powdered sugar dissolves quickly and produces a smooth frosting.
  • Coffee – I added coffee to the powdered sugar instead of a milk or water. This will give the frosting a unique flavor that matches well with the apple bars.

How to make Vegan Apple Pie Bars

Preheat the oven to 375°F.

In a medium size mixing bowl, combine the flour, salt, and margarine.

Continue by adding the oil and mix together well.

Note : It will be dry.

Next add the water, 1 Tbsp at a time, mixing after each Tbsp.

The dough should clean the sides of the bowl.

If the dough seems to dry, add 1 to 2 Tbsp. of oil, mixing well after each to make sure not to over moisten. Do not add more water.

Once the dough is combined, form it into a ball.

Then place the ball onto a floured surface.

Continue by cutting the ball in half and place half of the ball back in the bowl.

Roll out half the dough ball, thin enough to cover the bottom and slightly up the side of a 13×9 pan.

Carefully place the rolled out dough into the 13×9 pan.

Next peel and dice the fresh apples, spread the apples evenly, covering the bottom of the dough.

Frozen apples or thawed apples will work just as well, or mix both the fresh and frozen/thawed apples.

In a small bowl, mix together sugar and cinnamon, sprinkle the sugar mixture over the apples.

Remove the other half of the dough from the bowl and place onto the floured surface and roll it out, enough to cover the apples.

Carefully place the dough onto the apples, seal the edges, and cut slits on the top, so that the seam escapes while baking.

Before baking, brush a little oil on the top of the crust to prevent the crust from drying out.

Slide the dish into the oven and bake the bars for 50 minutes.

Notice : The apples have formed their own sauce and the crust has slightly browned.

Remove from the oven and let the bars cool for a few hours.

Once the bars are completely cool, it is time to frost them.

How to frost these Vegan Apple Pie Bars

In a small bowl, mix together the powdered sugar and cooled brewed coffee.

Next, drizzle the frosting over the cooled apple bars.

Cut and serve with your favorite topping and a hot beverage on the side, Enjoy!

Ingredients
  

  • 2 1/2 Cup Flour Plus extra for rolling out the dough.
  • 1 tsp Salt
  • 1/3 Cup Vegan Margarine
  • 1/3 Cup Oil Plus 1/4 Cup oil for brushing the top of the crust before baking. Avocado or olive oil.
  • 4 Tbsp Cold Water
  • 10 Cups Apples Peeled and cut up. Fresh, frozen or thawed.
  • 1/2 Cup Sugar Mixed together with the cinnamon and sprinkled over the apples before adding the top dough.
  • 1 tsp Cinnamon

Frosting

  • 1 Cup Powdered Sugar
  • 4 tsp Brewed Coffee Chilled or room temperature
