You will be surprised how much these mushrooms actually taste like pepperoni!

Add in the right spices and they become a healthy alternative to the spicy salami that we all know as pepperoni.

Going meatless with mushrooms is nothing new.

Mushrooms have a texture similar to meat. are full of umami flavor, and they work well with just about everything.

So it is not a surprise that mushrooms work well as a pepperoni.

What are the ways to use these Vegan Pepperoni Mushrooms?

As a filling for a calzone.

On top of your favorite sandwich.

In a baked dish.

And as a topping for pizza.

Oh so many possibilities!

Vegan Pepperoni Mushrooms

Ingredients needed for the pepperoni mushrooms

  • Mushrooms – The mushrooms I have used in this recipe are the shiitake, cremini, white button, and portabello. Personally I like the darker mushrooms for this recipe. Try different types of mushrooms and find your favorite.
  • Oil – Olive oil is used to saute the mushrooms.
  • Onion – Fresh onion or a powdered onion will work to add a sweet and earthy flavor.
  • Garlic – Minced garlic adds a subtle presence that infuses beautifully with the mushrooms.
  • Tomato Paste – Tomato paste adds color and a savory flavor to the recipe.
  • Maple Syrup – Real maple syrup adds just a hint of a smokey sweet maple flavor to the mushrooms.
  • Seasonings – Red pepper chili flakes add the right amount of heat, fennel and Italian seasoning give the mushrooms a Italian flavor, smoked paprika adds the woodsy smoke flavor, salt and pepper for added taste.

How to make these Vegan Pepperoni Mushrooms

Clean and slice the mushrooms and onions.

Add oil, mushrooms, and onions to a medium sized fry pan and saute for about 7 minutes or until the they caramelize and slightly brown.

In a small bowl, add the water, tomato paste, maple syrup, all the spices, and mix well.

Next add the small bowl of ingredients to the fry pan with the mushrooms, stir while cooking for about another 7 minutes.

Once the mushrooms are done add to what ever you would normally add pepperoni too.

Ingredients
  

  • 2 8 oz. Tubs Fresh Mushrooms Cleaned and sliced. Use any type of mushroom you like.
  • 1 Tbsp Olive Oil

Mix these ingredients together in a small bowl.

  • 1/2 Cup Water
  • 1 Fresh Onion Or 2 tsp of Powdered Onion.
  • 1 tsp Minced Garlic
  • 2 Tbsp Tomato Paste
  • 1/4 tsp Red Chili Pepper Flakes
  • 1/2 tsp Fennel Seed
  • 2 tsp Italian Seasoning
  • 1 tsp Smoked Paprika
  • 1 Tbsp Real Maple Syrup
  • Salt and Pepper to taste
