Vegan Rice Pudding is a creamy tasty treat that is so easy to make using simple ingredients.
It’s a nostalgic recipe that is so simple using only 4 easy to find ingredients.
But you can easily customize it with your favorite nuts, fruit, berries, or different spreads!
Here are some of my recipes to try with your pudding: Pear Apple Butter, Spiced Pumpkin Butter, or Homemade Cranberry Sauce.
A rice pudding can be enjoyed as a snack, dessert, or even a wonderful breakfast!
This recipe is not overly sweet even though I add a little maple syrup.
But you do not have to add maple syrup while it cooks, you can save it for when you serve the pudding.
Here are just a few ideas on how to serve your Vegan Rice Pudding
Instead of adding the sweetener of choice to your rice pudding while it bakes, add it when you serve.
Different sweeteners to try besides real maple syrup are white cane sugar or brown sugar.
I also personally like to add a little fruit or berries to my rice pudding, below are just a few suggestions…
Fruits or Berries
Fresh strawberries, blueberries, blackberries, or raspberries.
Freshly sliced banana, apples, peaches, pears, or even mango.
Or why not add your favorite spread, jam, or jelly to the top of your rice pudding.
Other add in’s to try on your pudding
A scoop of your favorite nut butter – such as peanut, almond, or cashew butter.
Spices – ginger, cardamon, nutmeg, or a dusting of chocolate powder.
Nuts or seeds – sliced almond, walnuts, or pecans.
Ingredients needed for the pudding
- Rice – My favorite rice to use in all my recipes is the basmati rice. A long grain rice that is not only delicate in texture, but has a unique and distinctive aroma and flavor. Any rice will work wonderfully in this dish.
- Plant Based Milk – I like to use an unsweetened plain or vanilla flavored almond milk in this recipe. Use your favorite plant based milk.
- Real Maple Syrup – My preferred sweetener of choice is maple syrup. I love the sweet smokey caramel/vanilla flavor it brings to this dish. Don’t have maple syrup? You can substitute with brown sugar. white cane sugar, or eliminate the sweetener completely.
- Ground Cinnamon – I used cinnamon in my pudding. This can be customized with your favorite spices such as nutmeg, cardamom, ginger, or even anise. Or why not mix together a variety of spices to make your signature seasonings for the recipe.
Mix-ins that you can bake into the pudding
- Dried or Fresh Fruit – I added fresh apples to my pudding. Here are a few suggestions that you could add to your own rice pudding- pears, peaches, figs, raisins, currents, or apricots.
- Berries – Some different berries to try are – Blueberries or strawberries.
- Nuts – Walnuts or pecans.
