Vegan Rice Pudding

Vegan Rice Pudding is a creamy, easy to make using only 4 simple ingredients, and a tasty treat.

Ingredients
  

  • 1 Cup White Rice I used basmati rice. Use your favorite white rice.
  • 4 Cups Plant Based Milk I used a unsweetened vanilla almond milk. Use your favorite plant based milk.
  • 1/3 Cup Real Maple Syrup Can be substituted with white or brown sugar.
  • 1 tsp Ground Cinnamon
  • 4 Apples Optional. I used gala apples in this recipe.
  • Sliced Almonds Optional.
  • Creamy Peanut Butter Optional. Drizzled on the top.

Equipment

  • 1 3 Qt. Slow Cooker

Method
 

  1. In a medium saucepan on a medium heat, pour in the milk and heat until the milk come to a gentle simmer.
  2. While that is warming up, grease the inside of the slow cooker crock.
  3. Once the milk has come to a gentle simmer, pour this into the crock.
  4. Next rinse the rice then add to the milk.
  5. If adding fruit, berries, or nuts, chop and add to the crock.
  6. Sprinkle in the cinnamon or any other spices.
  7. Stir and set the slow cooker to a high setting and cover.
  8. Leave this to cook for about 2 and a half hours, checking and stirring a few times though out.
  9. Once the rice is cooked, serve hot.

Notes

Mix-ins to add while cooking
Dried or fresh fruit -  Apples, pears, peaches, figs, raisins, currents, or apricots.
Berries - Blueberries or strawberries.
Nuts - Walnuts or pecans.
What to garnish the rice pudding
Different sweeteners to try are real maple syrup, white cane sugar, or brown sugar.
Fruit or berries - Freshly sliced banana, apples, peaches, pears, mango, strawberries, blueberries, blackberries, or raspberries.
Or add a spread, jam or jelly.
A scoop of your favorite nut butter - peanut, almond, cashew butter, or add your favorite nut butter.
Spices - ginger, cardamon, nutmeg, or a dusting of chocolate powder.
Nuts or seeds - sliced almond, walnuts, or pecans.
