A new version of the PB&J or PB&Banana, The Grilled Peanut Butter Blueberry Banana Sandwich!

I have always been a huge fan of PB&J, and with this new version I am even more in love with this sandwich!

For me it’s nostalgic, as it is for most.

But even more it is the simplicity of it, just smear peanut butter and jelly on bread and you have a sandwich that does not need to be kept cold or hot, EASY!

As my taste mature become more refined, I find myself wanting something a little bit more.

First I wanted to cut down the sugar, so this is why I used fresh or frozen berries instead of jam or jelly.

And since you are cutting out the sugar from the jelly or jam, I like to add a sweet ripe sliced banana, it will also give the sandwich more substance.

Second, all though I do enjoy the crunchiness of the crunchy peanut butter, I love the ooey gooey creamy peanut butter when it’s heated, it becomes much more creamy.

Third and last reason for this change, is the bread.

What about the bread? Well for starters the plain soft bread absorbs so much of the spreads that the sandwich always becomes so dry.

But when the sandwich is grilled, I do not notice this as much.

The crispness of the bread with the gooeyness of the peanut butter, add the sweetness of the banana, and the surprise burst of the berries and you have the perfect balance in this grilled sandwich.

Ingredients needed for this sandwich

  • Bread – For my sandwich I used my favorite Gluten Free sliced bread. Try different types of bread, don’t limit this to just white or wheat, try a flavored bread.
  • Peanut Butter – I used a creamy peanut butter in my sandwich, because it was what I had on hand. There are so many different nut butters out there to try! Experiment with them, and don’t limit yourself to creamy, give the crunchy style a try.
  • Blueberries – I am a huge fan of the blueberry, so this is always my choice. But don’t limit yourself to only one berry, try a different one each time, or maybe mix berries. Be creative.
  • Avocado Oil – I like to use avocado oil because you will get a buttery flavor from this oil and it has a high smoke point.
  • Jam or Jelly – In this recipe I did not add a jelly or jam, just the blueberries. This can be a option if you don’t have berries on hand or don’t want the berries at all, or maybe you would like to have both the berries and the jelly or jam.
  • Bananas – Slice to your desire of thickness.

How to make this grilled sandwiche

On your favorite slices of bread, spread peanut butter on one side of each slice.

If you are adding jam or jelly to this sandwich, spread peanut butter on one slice and jam or jelly on the other slice.

Slice up a banana and set aside.

If using fresh berries, clean and let dry before adding to the sandwich.

Frozen berries work just as well, this is what I used in my sandwiches. I used very small blueberries, but if you’re using larger berries, thaw before adding.

Lightly drizzle the oil in the pan before heating.

Warm up the medium sized fry pan on low heat.

Place a slice of bread into the pan, peanut butter side up.

Add the sliced bananas on top of the peanut butter.

Next place berries on top or in between the bananas.

Lastly place the peanut butter side of the bread down on top.

Cook for about 2 to 3 minutes, gently flip, and continue cooking for another 2 to 3 minutes, or until lightly browned. The blueberries mostly stick to the peanut butter but some might fall out when you flip the sandwich, you can just stick them back in.

Remove the sandwich from the pan, place on a plate, cut in half.

Serve your Grilled Peanut Butter Blueberry Banana Sandwich immediately.
