These Vegan Chocolate No Bake Cookies are such a quick and easy treat.

Most of us have had these in our life time and have such fond memories of these fudge flavored no bake oatmeal cookies.

As for me, I love the fact that I don’t have to turn on my oven to bake these cookies.

These cookies are so simple, you probably already have all the needed ingredients in your pantry and refrigerator.

Just make sure you have all your ingredients measured and ready to add before starting this recipe.

This will ensure that your cookies will set up perfectly.

Vegan Chocolate No Bake Cookies

Ingredients needed to make the cookies

  • Oats – Most oats will work in these cookies, old fashioned or the quick oats are the best.
  • Sugar – A pure cane sugar is the sweetener of choice.
  • Margarine – Use your favorite vegan margarine.
  • Plant Based Milk – I used a unsweetened vanilla almond milk in my cookies. Use your favorite plant based milk.
  • Cocoa Powder – I used a cocoa powder to intensify the chocolate taste.
  • Peanut Butter – I like using peanut butter in my cookies. But you could substitute with a almond, cashew, or hazelnut butter.
  • Salt – Salt will intensify the chocolate flavor in the cookies.
  • Pure Vanilla Extract – Vanilla extract enhances the flavor of the other ingredients.

How to make the Vegan Chocolate No Bake Cookies

Prepare a baking sheet with parchment paper, set aside.

Make sure to have all the ingredients measured and ready to add to the sauce pan.

This will ensure that you have the perfect result for these cookies.

In a large sauce pan, combine the sugar, margarine, milk, cocoa powder, and salt.

Bring to a boil, stirring constantly for 1 minute.

Remove from heat, add the peanut butter and vanilla, stir until well blended.

Lastly, add the oats and stir until everything is covered by the chocolate mixture.

Scoop the mixture into a ball and place them onto the parchment paper lined baking sheet.

You should get about 25 cookies once the baking sheets are full.

Let the cookies rest until they set.

Once the cookies are easy to pick up without falling apart, store these cookies in a air tight container.

Store the cookies in the refrigerator, this will keep them firm.

  • 1 tsp Pure Vanilla Extract
