Vegan Chocolate no bake Cookies

Ingredients
  

  • 3/4 Cup Pure Cane Sugar
  • 1/2 Cup Vegan Margarine
  • 1/2 Cup Plant Based Milk I used a unsweetened vanilla almond milk, use your favorite plant based milk.
  • 3 Tbsp Cocoa Powder
  • Dash Salt
  • 1/2 Cup Creamy Peanut Butter Or try almond, hazelnut, or cashew butter.
  • 1 tsp Pure Vanilla Extract
  • 3 Cups Oats I like to use old fashioned or a quick oat.

Method
 

  1. Prepare a baking sheet with parchment paper, set aside.
  2. Make sure to have all the ingredients measured and ready to add to the sauce pan. This will ensure that you have the perfect result for these cookies.
  3. In a large sauce pan, combine the sugar, margarine, milk, cocoa powder, and salt.
  4. Bring to a boil, stirring constantly for 1 minute.
  5. Remove from heat, add the peanut butter and vanilla, stir until well blended.
  6. Lastly, add the oats and stir until everything is covered by the chocolate mixture.
  7. Scoop the mixture into a ball and place them onto the parchment paper lined baking sheet.
  8. You should get about 25 cookies once the baking sheets are full.
  9. Let the cookies rest until they set.
  10. Once the cookies are easy to pick up without falling apart, store these cookies in a air tight container.
  11. Store the cookies in the refrigerator, this will keep them firm.
