This simply easy Sauteed Vegetable Sandwich is the perfect meal for non vegan and vegans alike.
So simple to make and yet so full of vegetables and flavor!
What I love about this sandwich is that you can customize it to you and your families favorite fresh vegetables.
And with the gardens full of all kinds of fresh vegetables, what better time to whip up a simply delicious sandwich!
What varieties of sauteed veggies would compliment this sandwich?
Why not try eggplant, asparagus, any summer squash, any peppers, different varieties of greens, onions, and of course mushrooms.
In my family’s vegetable sandwich I added zucchini ( they are abundant right now ), bell peppers, onions, and our favorite, fresh mushrooms.
But like I said, you can customize your sauteed vegetable sandwich to you and your families favorite vegetables and enjoy!
What are different ways to enjoy your sauteed vegetable sandwich?
Pick your favorite bread, bun or a wrap.
Slather the bun with a mayo, add cheese, burger (non vegan or vegan ), and top with a fresh tomato.
Other ways to enjoy the sauteed vegetables
Top your favorite pasta.
Add as a side dish to any meal.
A topping for your pizza.
On a bed of rice.
Ingredients needed for this sandwich
- Summer Squash – Any variety of summer squash will work in this sandwich, I used zucchini for my sandwiches.
- Peppers – Any of the different varieties of peppers will work in this sandwich, such as a hot pepper or mild pepper. I used a bell pepper for my families sandwiches.
- Onion – Pick your favorite onion for this sandwich, or don’t add onion. I added a red onion to our sandwiches.
- Mushrooms – Mushrooms are a must in our house, we love the earthy savory meaty flavor. But not everyone loves mushrooms as much as we do, you can add these or not this is a choice you can make. I have used the portabello, shiitake, and crimino mushrooms, or try different varieties of mushrooms each time you make this sandwich.
- Oil – You will need an oil to saute the vegetables. I sauteed with avocado oil, choose your favorite oil.
- Seasonings – I kept this simple with just salt, pepper and minced garlic. There is no specific seasoning that should be used, experiment with the different spices to find new favorites.
- Mayo – This is optional.
- Bread – We made this sandwich different ways for each person, and so can you. I made my sandwich with a wrap, and everyone else enjoyed the sandwich on a croissant bun.
- Tomato – Optional. Top the sauteed vegetables with a freshly sliced tomato.
How to make a Sauteed Vegetable Sandwich
Clean and cut all the vegetables, I did peel the zucchini, this is optional.
In a large fry pan, add the oil and all the vegetables, saute until the vegetables are soft and have a slight brown color to them.
Remove from the heat and set aside.
Warm up or toast the bun, bread, or wrap.
Smear the mayo onto the bread.
Top the mayo with a burger and/or cheese, optional.
Scoop the sauteed vegetables onto the bread, wrap, burger, and/or cheese.
Thinly slice a fresh tomato and add to your sandwich.
Enjoy!
Sauteed Vegtable Sandwich
Ingredients
- 1 Pepper of choice I used a bell pepper.
- 1 16 oz. Tub Fresh Mushrooms Any mushroom of your choice. I have used portabello, shiitake and crimino.
- 1 small to medium sized Onion
- 1 medium sized Zucchini Or any summer squash of your choice.
- Avocado oil or any oil of choice. For frying the vegetables.
- Salt to taste
- Pepper to taste
- 1 tsp Minced Garlic
- Bread, bun or wrap
- 1 Tomato Optional
- Mayo Optional
Instructions
