Vegan Chocolate Chocolate Chip Cookies

These Chocolate Chocolate Chip Cookies are so soft, super chocolaty and of coarse Vegan!

What makes these cookies super soft is Tofu! Yes Tofu!

I substituted the eggs in the recipe for 1/4 cup of tofu per egg.

What I was so impressed with was how soft and cakey these cookies turned out!! (And no you will not taste the tofu.)

I have to give credit to my husband for making up this cookie recipe, I am lucky he likes to experiment just as much as I do with new and different ingredients.

So if you are craving a cakey, sweet, and chocolaty cookie, this is the one for you to try.

Vegan Chocolate Chocolate Chip Cookies

Ingredients in these cookies

  • Oil – The oil keeps the cookies soft and moist, just like a cake. I have used both olive oil and avocado oil in the recipe.
  • Apple Sauce – Unsweetened apple sauce adds more moisture to the cookies.
  • Tofu – A soft silken tofu is used as a egg substitute in the cookies. And no you will not taste the tofu in the cookies, tofu takes on the flavors of the other ingredients in the cookies. The tofu gives the cookies a cakey and soft texture.
  • Sugar – I used a pure cane sugar in the cookies.
  • Plant Based Milk – Any plant based milk will work in this recipe, pick your favorite. I used a unsweetened vanilla almond milk for my cookies.
  • Real Vanilla Extract – The vanilla extract will enhances the other flavors in the recipe.
  • Baking Soda – The baking soda helps the cookies to rise and become light and fluffy.
  • Unsweetened Cocoa Powder – The cocoa powder adds a deep dark cocoa color along with a rich chocolate flavor.
  • Flour – All purpose white flour is used as a main ingredient for the cookies.
  • Salt – The salt enhances the rich chocolate flavor of these chocolaty chocolate chip cookies.
  • Chocolate Chips – Adding extra ooey gooey chocolaty goodness to these chocolate cookies.

How to make these Chocolate Chocolate Chip Cookies

Drain the tofu by wrapping the tofu into a linen towel before starting anything in the recipe. That will give the tofu enough time to completely drain, this can take up to 10 minutes.

Preheat the oven to 350°F.

Prepare two baking sheets with parchment paper and set aside.

Once the tofu has drained, cut the block of tofu in half. You only need one half of the block for this recipe. Save the other half for another recipe.

Mix together the oil, apple sauce, tofu, sugar, almond milk, vanilla, salt and baking soda in a mixing bowl until all is well blended.

Slowly add the cocoa powder and then start adding the flour, about 1/2 cup at a time while blending.

Once everything is well combined, fold in the chocolate chips until evenly distributed.

Next, scoop out about 1/8 cup of the cookie batter onto the baking sheet.

Continue until the baking sheet is full, leaving the cookies about 1 1/2 to 2 inches apart from each other.

After filling the baking sheet, place into oven and bake for about 6 to 8 minutes, rotate the baking sheet and bake for another 6 to 8 minutes.

Baking times can vary, so watch your cookies closely.

Vegan Chocolate Chocolate Chip Cookies

When checking the cookies, they should be firm to the touch, when they are done.

Move the cookies to a cooling rack to cool completely.

Serve your Vegan Chocolate Chip Cookies with a hot beverage of your choice or with a nice glass of your favorite ice cold beverage.

Store the cookies in a air tight container.
