This Vegan Baked Cabbage is an easy side dish that compliments just about anything.

After searching through old cook books for recipes, I found this recipe to be very interesting, even though it was not a vegan.

Personally I love cabbage, so I thought I would alter this recipe for vegans, and it really was an easy recipe to alter.

By itself, it makes for a great side dish.

But it could also make for a fantastic PASTA dish! Especially when you add in some vegan sausage.

I have added vegan sausages that I purchased from my local grocery store, but I have also used my Homemade Vegan Sausages.

There really is no limit to this simply easy and complimentary side dish!

Vegan Baked Cabbage

Ingredients needed for the dish

  • Cabbage – Personally I like to use a green cabbage. Use your favorite cabbage.
  • Sweetener – I added just a little real maple syrup to the recipe to help balance the flavors of the dish.
  • Cornstarch – The cornstarch is added to thicken the sauce in the recipe.
  • Plant Based Milk – I use a unsweetened plain almond milk to make the sauce in the recipe. Use your favorite plant based milk.
  • Oil – I have used either olive or avocado oil in this recipe. The oil is drizzled on top of the dish before baking.
  • Vegan Margarine – I used a vegan margarine to grease the baking dish. You can substitute with a spray oil.
  • Balsamic Vinegar – This rich and tangy flavored vinegar helps to transform a simple dish into a flavorful dish.
  • Vegan Mayonnaise – Adding just a little vegan mayo adds more of a creamy texture to the dish.
  • Seasonings – Onion powder (optional), smoked paprika, salt, and pepper.

How to make the Vegan Baked Cabbage

Grease a 13×9 glass baking dish with the vegan margarine or spray with a oil, set aside.

Preheat the oven to 350°F.

Slice the head of cabbage into bite sized pieces and spread evenly in the baking dish.

Continue by drizzling the balsamic vinegar over the cabbage.

Next, in a small mixing bowl, combined the plant based milk, maple syrup, cornstarch, all the seasonings, and the vegan mayo.

Pour the mixture over the cabbage.

Finish with a drizzle of oil over the cabbage before baking.

Cover the dish with foil.

Place the covered dish into the oven and bake for about a 1/2 hour.

After the 1/2 hour, stir the cabbage, recover the dish with foil, and continue baking for another 1/2 hour.

Now it is time to remove the foil and continue to bake for another 20 to 30 minutes until the cabbage is crisp and slightly browned.

NOTE: Watch this closely, once you remove the foil the cabbage will burn easily.

Once the dish has nicely browned, remove from the oven, and serve hot.

  • 1 Small head Green Cabbage
  • 1 tsp Balsamic Vinegar
  • 1 tsp Pure Maple Syrup
  • 3 Tbsp Cornstarch
  • 2 Cup Plant Based Milk I used a unsweetened plain almond milk. Use your favorite plant based milk.
  • 1/2 Cup Vegan Mayonnaise
  • 1 tsp Onion Powder Optional.
  • 1 tsp Smoked Paprika
  • 2 Tbsp Oil I have used olive or avocado oil in the recipe. Use your favorite oil.
  • Salt and Pepper To taste.
  • Vegan Margarine or a Spray Oil To grease the baking dish.
