Method
- Grease a 13x9 glass baking dish with the vegan margarine or spray with a oil, set aside.
- Preheat the oven to 350°F.
- Slice the head of cabbage into bite sized pieces and spread evenly in the baking dish.
- Continue by drizzling the balsamic vinegar over the cabbage.
- Next, in a small mixing bowl, combined the plant based milk, maple syrup, cornstarch, all the seasonings, and the vegan mayo.
- Pour the mixture over the cabbage.
- Finish with a drizzle of oil over the cabbage before baking.
- Cover the dish with foil.
- Place the covered dish into the oven and bake for about a 1/2 hour.
- After the 1/2 hour, stir the cabbage, recover the dish with foil, and continue baking for another 1/2 hour.
- Now it is time to remove the foil and continue to bake for another 20 to 30 minutes until the cabbage is crisp and slightly browned.
- NOTE: Watch this closely, once you remove the foil the cabbage will burn easily.
- Once the dish has nicely browned, remove from the oven, and serve hot.
