It’s loaded with protein, fiber and heart healthy banana and blueberries.
A flavorful, healthy, vegan and gluten free breakfast bar that will fill you up and keep you full until your lunch.
Make this breakfast bar ahead of time, store them in the freezer, and grab them for those mornings that you are on the run.
Ingredients for this breakfast bar
- Oil – In this recipe I use olive oil, but any oil will work.
- Peanuts – The peanuts are pulsed to almost a flour in this recipe. Peanuts deliver a flavor and texture that you will not find in gluten free flours.
- Almond Meal – In this recipe I used almond meal as a replacement of a flour. You can substitute the almond meal with almond flour.
- Baking Powder – Baking powder is a complete leaving agent. Baking powder causes the batter to rise when baked.
- Banana – A ripe banana adds moisture and replaces eggs in this recipe.
- Blueberries – Blueberries are a perfect addition to a breakfast bar, they add so many benefits to the body. The flavor is so addictive, the little purple berries can be sweet with a tart flavor of green, which makes them so delicious.
- Egg Substitute – In this recipe I used a powdered egg substitute.
- Real Maple Syrup – Just a little maple syrup was added for a hint of sweetness.
How to make this Banana Blueberry Breakfast Bar
Preheat the oven to 350°F.
Grease a 8×9 glass dish with a little oil, set aside.
In a small bowl, mix together the powdered egg substitute to package instructions and set aside to thicken.
In a food processor, pulse the peanuts. Don’t worry if the peanuts are not ground up perfectly, you want little pieces for more texture.
In a medium sized mixing bowl, add and blend together the ground peanuts, almond meal, and baking powder.
Add the egg substitute to a small bowl with the banana, oil and maple syrup, mash and blend until well combined.
Add the dry ingredients to the wet ingredients and mix well.
Next fold the blueberries into the batter, being careful not to over mix.
Scoop and spread the batter into the greased baking dish, bake for about 30 to 45 minutes, or until a skewer comes out clean when poked into the center of the bar.
Remove from oven and allow to cool.
Once the bar has cooled, cut into squares and place into individual containers and freeze.
