Preheat the oven to 350°F.
Grease a 8x9 glass dish with a little oil, set aside.
In a small bowl, mix together the powdered egg substitute to package instructions and set aside to thicken.
In a food processor, pulse the peanuts. Don't worry if the peanuts are not ground up perfectly, you want little pieces for more texture.
In a medium sized mixing bowl, add and blend together the ground peanuts, almond meal, and baking powder.
In a separate mixing bowl, add the egg substitute, banana, oil and maple syrup, mash and blend until well combined.
Add the dry ingredients to the wet ingredients and mix well.
Next fold the blueberries into the batter, being careful not to over mix.
Scoop and spread the batter into the greased baking dish, bake for about 30 to 45 minutes, or until a skewer comes out clean when poked into the center of the bar.
Remove from oven and allow to cool.
Once the bar has cooled, cut into squares and place into individual containers and freeze.
