This Banana Blueberry Breakfast Bar is a high protein, heart healthy and a fast, easy, and on the go satisfying breakfast.

Ingredients
  

  • 2 Tbsp Olive Oil
  • 2 Cups Peanuts
  • 1 Cup Almond Meal
  • 2 tsp Baking Powder
  • 1 Large Ripe Banana
  • 3 Egg Substitute equal to 3 Eggs
  • 2 Tbsp Real Maple Syrup
  • 1 Cup Blueberries

Instructions
 

  • Preheat the oven to 350°F.
  • Grease a 8x9 glass dish with a little oil, set aside.
  • In a small bowl, mix together the powdered egg substitute to package instructions and set aside to thicken.
  • In a food processor, pulse the peanuts. Don't worry if the peanuts are not ground up perfectly, you want little pieces for more texture.
  • In a medium sized mixing bowl, add and blend together the ground peanuts, almond meal, and baking powder.
  • In a separate mixing bowl, add the egg substitute, banana, oil and maple syrup, mash and blend until well combined.
  • Add the dry ingredients to the wet ingredients and mix well.
  • Next fold the blueberries into the batter, being careful not to over mix.
  • Scoop and spread the batter into the greased baking dish, bake for about 30 to 45 minutes, or until a skewer comes out clean when poked into the center of the bar.
  • Remove from oven and allow to cool.
  • Once the bar has cooled, cut into squares and place into individual containers and freeze.
