Noodles or rice?
This recipe is a old family favorite and it has always been made with rice.
And because this is one of my favorite dishes, I have not tried noodles.
Because I believe why mess with perfection.
But if you feel adventurous go ahead and give the noodles a try.
Ingredients needed for this dish
- Vegetables – I added corn and green beans to this dish. This can be any vegetable of your choice and you can use canned or fresh vegetables.
- Vegetable Broth – In this dish I used my favorite vegetable broth and water.
- Rice – I like to use a white rice for this chow mein. The white rice will pick up more flavor.
- Mushrooms – Fresh or canned mushrooms work well in this dish. My favorite variety of mushrooms to use are the white button or the portabello mushroom.
- Onion – Any fresh onion such as leek, green onion, shallot or a sweet onion. You can also use a powdered onion for this dish.
- Oil – In this recipe I have used both avocado and olive oil.
- Celery – Celery enhances the sweetness and adds a savory flavor to the chow mein.
- Minced Garlic – Adding flavor through out the dish.
- Soy Sauce – Adding saltiness with a slight sweet taste and a moderate umami to the chow mein.
- Salt and pepper – To taste.
- Meat Alternative – Optional. A vegan crumb meat alternative can be added to this dish. But if adding, this will have to be cooked to the package direction before adding to the chow mein.
- Chow Mein Noodles – I love adding these crispy chow mein noodles on top of my oven chow mein before baking, you can also add these noodles when serving the chow mein, or do not add them at all, optional.
