- Preheat the oven to 350°F.
- If adding a meat alternative, saute this before adding to the baking dish.
- Clean and chop a onion and celery, place into the baking dish.
- Drain and rinse the can of mushrooms, add to the baking dish.
- Or if using fresh mushroom, saute before adding to the dish.
- Rinse the rice before adding to the dish.
- If using canned green beans and corn, do not drain, just open and pour into the baking dish.
- Mix in a small bowl, the soy sauce, garlic, oil, salt, pepper with the vegetable broth and water, pour over the rice and vegetables.
- Stir all the ingredients together.
- Cover with foil and bake for 1 hour.
- After a hour, stir and if you would like to add chow mein noodles add them now, cover and return to the oven for another 30 minutes.
- Once the chow mein is done, pull out of the oven and let it set for about 15 minutes before serving.
- Serve this vegan oven chow mein with a sprinkle of crispy chow mein noodles.
