Bell Pepper Pizzas are a great healthy alternative to the traditional carbo loaded pie.

Don’t get my wrong, I LOVE pizza, but it is nice to switch it up every once in a while for a little something different.

These individual little hand held pizzas are perfect as an appetizer, snack, or even as a meal.

Customize each little pizza to everyone’s own taste, carnivore, vegan, or vegetarian.

What I love about these little pizzas is that I can have these ready in as little as 30 minutes!

This includes the prep work and baking.

So why not give these personal sized pizzas a try for a quick lunch, they are healthy and a wonderful way to get your vegetables.

Bell Pepper Pizzas

Ingredients needed for these pizzas

  • Bell Peppers – The best bell peppers for this recipe are the large sweet yellow, red, or orange bell peppers.
  • Sun-Dried Tomatoes – Sun-dried tomatoes are optional.
  • Tomatoes – I used a small grape sized tomato on these little pizzas.
  • Olives – Green and/or black olives are a wonderful addition to these pepper pizzas. Olives are optional.
  • Hummus – In this recipe I added hummus to half of the peppers, instead of using a sauce.
  • Marinara Sauce – I used a marinara sauce on the other half of the peppers.
  • Oil – Oil is optional. I used a olive oil drizzled over the pepper pizzas. This prevents the peppers from drying out while baking.
  • Cheese – A shredded vegan cheese or a regular cheese can be sprinkled on each pepper. Cheese is optional.
  • Seasonings – I sprinkled powdered garlic, powdered onion, and Italian seasoning to each pepper.

Optional Ingredients for these pizzas

  • Vegan Pepperoni
  • Onion – Sauteed or raw
  • Garlic Cloves
  • Fresh Spinach
  • Mushrooms – Fresh, sauteed, or canned.
  • Herbs – Fresh herbs sprinkled on top before serving, such as basil, oregano, Rosemary, thyme, or chives.
  • Artichoke Hearts
  • Pineapple
  • Eggplant
  • Zucchini
  • Baked Sweet Potatoes
  • Beans – I added roasted chickpeas to my pizzas. Try different beans each time your make these.

How to make Bell Pepper Pizzas

Preheat the oven to 400° F.

Prepare a baking sheet with parchment paper, set aside.

Clean and slice the bell peppers in half ( from stem to bottom ), place them onto the prepared baking sheet ( cut side up ).

Add and spread either hummus or marinara sauce into each pepper half.

Slice the olives, fresh tomatoes, sun-dried tomatoes, and place onto each pepper half.

Or add your favorite toppings to each pepper before adding the final touches.

If adding cheese, sprinkle each pepper half with your cheese of choice.

Dust each pepper with your seasoning and drizzle each with a little oil.

Slide the baking sheet into the oven and bake for 15 to 20 minutes.

Remove from the oven once the cheese has slightly browned and melted.

If adding fresh herbs, sprinkle over the baked pizzas.

Serve these little pizzas hot or cold and with your favorite garnishes.

Ingredients
  

  • 4 Large Bell Peppers Red, Orange, and/or Yellow.
  • Marinara Sauce Substitute with your favorite sauce. I added 2 Tbsp to each pepper half. Note: I added sauce to 4 pepper halves.
  • Hummus Substitute with hummus instead of a sauce. I added 2 Tbsp to each pepper half. Note: I added hummus to 4 pepper halves.
  • Oil I used olive oil in this recipe. Use your favorite oil.

Optional Ingredients to add to the pizzas

  • Sun-Dried Tomatoes
  • Tomatoes I used a grape sized tomato on my pizzas.
  • Olives Black and/or Green.
  • Cheese Add your favorite cheese.
  • Vegan Meat A crumble or pepperoni.
  • Onion Raw or Sauteed.
  • Mushrooms Fresh, sauteed, or canned.
  • Eggplant
  • Zucchini
  • Artichoke Hearts
  • Garlic Cloves
  • Fresh Spinach
  • Pineapple
  • Fresh Herbs Basil, Thyme, Rosemary, Oregano, or Chives.
