Bell Pepper Pizzas

These individual customizable little hand held pizzas are perfect as a appetizer, snack, or even as a meal.

- 4 Large Bell Peppers Red, Orange, and/or Yellow.
- Marinara Sauce Substitute with your favorite sauce. I added 2 Tbsp to each pepper half. Note: I added sauce to 4 pepper halves.
- Hummus Substitute with hummus instead of a sauce. I added 2 Tbsp to each pepper half. Note: I added hummus to 4 pepper halves.
- Oil I used olive oil in this recipe. Use your favorite oil.
Optional Ingredients to add to the pizzas
- Sun-Dried Tomatoes
- Tomatoes I used a grape sized tomato on my pizzas.
- Olives Black and/or Green.
- Cheese Add your favorite cheese.
- Vegan Meat A crumble or pepperoni.
- Onion Raw or Sauteed.
- Mushrooms Fresh, sauteed, or canned.
- Eggplant
- Zucchini
- Artichoke Hearts
- Garlic Cloves
- Fresh Spinach
- Pineapple
- Fresh Herbs Basil, Thyme, Rosemary, Oregano, or Chives.
Preheat the oven to 400° F.
Prepare a baking sheet with parchment paper, set aside.
Clean and slice the bell peppers in half ( from stem to bottom ), place them onto the prepared baking sheet ( cut side up ).
Add and spread either hummus or marinara sauce into each pepper half.
Slice the olives, fresh tomatoes, sun-dried tomatoes, and place onto each pepper half.
Or add your favorite toppings to each pepper before adding the final touches.
If adding cheese, sprinkle each pepper half with your cheese of choice.
Dust each pepper with your seasoning and drizzle each with a little oil.
Slide the baking sheet into the oven and bake for 15 to 20 minutes.
Remove from the oven once the cheese has slightly browned and melted.
If adding fresh herbs, sprinkle over the baked pizzas.
Serve these little pizzas hot or cold and with your favorite garnishes.
