This delicious Vegan Gluten Free Crumb Cake is so easy to make with easy to find ingredients.
A yellow moist cake with just the right amount of sweetness, perfect for serving along side your favorite hot beverage.
In this recipe, I used jam and more of a apple crisp topping as the streusel.
And because of these changes, I had no idea what to name this recipe, is it a coffee cake or a crumb cake??
So I researched the differences between a coffee cake and a crumb cake.
And here is what I found….
What is a coffee cake?
A coffee cake is a cake that surprisingly does not even have coffee in the cake!
Instead it is a cake that is to be served WITH coffee.
It’s a moist and tender cake topped with a streusel, usually more cake than streusel.
What is a crumb cake?
This cake is similar to the coffee cake, it’s moist and tender, with a thicker and chunkier layer of streusel
It’s a sweeter cake because of the majority streusel to cake.
So what would be the right fitting name for this crumbly cake?
Well it is customizable, because any flavor of jam can be used.
This cake is a little sweeter because of the jam, similar to the crumb cake.
A cake that is moist and tender, similar to both the coffee and crumb cake.
However, the streusel is different from both the coffee and crumb cake.
So I feel this is really more like a crumb cake, because of the sweetness.
Ingredients for this Vegan Gluten Free Crumb Cake
- Almond Flour – This flour is naturally gluten free and grain free but also contains beneficial vitamins, minerals, and is also high in protein and low in carbs. A healthy flour alternative.
- Gluten Free Flour – There are so many different brands out on the market today, and not everyone likes the same ones. Experiment with the different brands to find your favorite, I used the King Arthur Measure for Measure.
- Sugar – To add just a little sweetness to the cake.
- Baking Powder – This leavening agent is needed to increase the volume and lighten the texture of the cake.
- Plant Based Milk -Personally, I like to use an almond milk or a cashew milk for all my baking. Try different types of these milks, you might find out that you prefer a different plant based milk. Experiment!
- Vinegar – I used an apple cider vinegar for all my baking, this is needed to curdle the plant based milk to make the vegan buttermilk.
- Extracts – I used Real vanilla extract in this recipe, but an almond extract would be a great alternative enhancer for this crumb cake. Or why not use both extracts together.
- Jam – I used an apricot jam in this recipe but any jam can work. Raspberry, blueberry, blackberry, strawberry, peach, the list goes on.
Ingredients for the topping
- Maple Syrup – Maple syrup will give this topping a caramel-like flavor with notes of vanilla, not just the sweet taste that you get with refined sugar. Something a little different.
- Almond Flour – Almond flour has a mild almond flavor, a little more flavor than the gluten free flour.
- Oats – Oats will give the topping texture, fiber, and a mild nutty flavor.
- Spices – Adding a little cinnamon gave this topping a warm and pleasant flavor.
Instructions on how to make this Vegan Gluten Free Crumb Cake
Preheat the oven and grease an 8 x 8 baking dish.
Next, we will need to make a vegan buttermilk.
In a measuring cup, measure the plant based milk and add the apple cider vinegar.
This will need to set aside to curdle for a few minutes.
Making the cake
In the mean time, measure and combine all the cake batter ingredients, the flours, sugar, baking powder, salt, and vanilla.
Then stir in the vegan buttermilk.
Continue to stir until everything is well combined.
Pour the cake batter into the greased baking dish, spreading evenly.
Spoon out the jam around the top of the cake batter, then use a knife to spread out the jam into an even layer. Alternatively, you could swirl the jam into the batter.
Making the crumb topping
In a small bowl, mix together the almond flour, oats, cinnamon, and the maple syrup.
Evenly sprinkle the crumb topping on top of the cake batter and jam.
Place into the oven and bake for 40 to 45 minutes, or until a toothpick comes out clean when plunged into the center.
Remove the cake from the oven and let it cool.
Serve this Vegan Gluten Free Crumb Cake slightly warm, with a hot beverage.
Vegan Gluten Free Crumb Cake
Ingredients
For the Cake
- 1 Cup Almond Flour
- 1 Cup Gluten Free Flour I used King Arthur Measure for Measure.
- 1/3 Cup Sugar
- 2 tsp Baking Powder
- 1/4 tsp Salt
- 1 tsp Real Vanilla Extract
Vegan Buttermilk
- 1 Cup Plant Based Milk I used Almond Milk, any plant based milk will do.
- 1 tsp Apple Cider Vinegar
Topping the cake
- 1/2 Cup Jam I used Apricot jam, but any jam will work.
The Crumb Topping
- 1/2 Cup Almond Flour
- 1/2 Cup Rolled Oats
- 1/2 Cup Maple Syrup
- 1 tsp Cinnamon
Instructions
- Preheat oven to 375° F.
- Lightly grease a 8 x 8 glass baking dish and set aside.
- To make the vegan buttermilk, measure out the plant milk for the cake and add the apple cider vinegar, set aside for a few minutes to let it curdle.
Making the cake
- In a medium sized mixing bowl, mix together almond flour, gluten free flour, sugar, baking powder, salt, vanilla, and the vegan buttermilk.
- Stir until everything is well combined.
- Pour the batter into the glass baking dish and spread it out evenly.
- Spoon out the jam around the top of the cake batter, then use a knife to spread out the jam into an even layer. Alternatively, you could swirl the jam into the batter.
Making the crumb topping
- In a small bowl, mix together the almond flour, oats, cinnamon, and the maple syrup.
- Evenly sprinkle the crumb topping on top of the cake batter and jam.
