No Bake Loaded Vegan Nachos

These No Bake Loaded Vegan Nachos are simply easy to prepare and a healthy alternative to the original.

Being a large fan of nachos, there is something about the creamy cheese, crispy chips, and all the fresh vegetables that is so satisfying.

And just because we are vegan doesn’t mean you have to miss out on NACHOS!

We all know and love them as a snack or as an appetizer, but they also make for a great meal.

There is nothing wrong with nachos as meal, think about it, they are loaded with a ton of vegetables, protein in the vegan cheese, and who doesn’t love the salty crispiness of the chip.

And there are just an endless variety of different toppings that you can experiment with!

My favorites are a good vegan cheese, spinach or lettuce, salsa, olives, chives (in place of onions), peppers, tomatoes, and a good aioli.

Occasionally I would add corn, black beans or refried beans.

This is why I love nachos, you can make them extremely personalized!

In my recipe you will find extras that are optional and will make these No Bake Loaded Vegan Nachos even more irresistible.

No Bake Loaded Vegan Nachos

What ingredients are needed for these Loaded Vegan Nachos?

  • Tortilla Chips – So many varieties of tortilla chips out there for every taste, I love the plain salted, restaurant-style white corn tortilla chips for my nachos.
  • Chives – I love to use fresh chives on our nachos, but a fresh onion works as well.
  • Peppers – I used red, yellow, and orange bell peppers on these nachos. So many different peppers to choose from, why not try adding a little heat to your nachos with any of the hot peppers.
  • Tomatoes – On these nachos I used the slicer tomatoes, choose your favorites for your nachos.
  • Green and Black Olives – I prefer black and green on my nachos, but this is optional.
  • Avocados – We love the mild buttery flavor and smooth texture of avocados, this is a must have.
  • Spinach or lettuce – This time I tried spinach on our nachos, and it was a hit! But lettuce is always a staple on a good nacho plate.
  • Vegan Cheese – In this recipe I used my cashew cheese for the creamy cheese on these nachos. You can check out my recipe for A Creamy Vegan Cashew Cheese. But there are so many new vegan cheese alternatives available on the market today, even if you are not vegan, try the different varieties out there, you might be pleasantly surprised.
  • Salsa – Homemade salsa is the best for these nachos, but if you do not have that option, try the many different brands available on the market today.
  • Cooked Corn – This is optional.
  • Beans – Try a black or pinto bean, this is optional.

Prep for the nachos

Clean and chop all the vegetables into bite sized pieces and set aside.

Slice the olives and set aside.

How to assemble these vegan nachos?

Pull out a large platter and spread out the tortilla chips to cover the platter.

Drizzle the vegan cheese over all the tortilla chips.

Evenly spoon salsa over the chips.

Place the sliced olives onto the chips.

Spread out the fresh vegetables onto the chips, trying to cover every chip.

If adding beans, now would be the time to sprinkle them over the chips.

Lastly, drop on little dollops of aioli (optional) on the top of the fresh vegetables and serve.

Serving these vegan loaded nachos.

Whether it is for a movie, a game night, or a social night, these nachos will be a perfect treat for everyone.

When it comes to nachos, make sure to only prepare what you will eat at one setting.

You can always make more up when everyone cleans the platter.

Ingredients
  

  • Tortilla Chips I used white corn
  • Chives Or add fresh onions.
  • 1/2 Red Sweet Pepper Chopped
  • 1/2 Orange Sweet Pepper Chopped
  • 1/2 Yellow Sweet Pepper Chopped
  • 1 Tomato Chopped
  • 1 Avocado Chopped
  • 4 Large Green Olives Optional
  • 4 Large Black Olives Optional
  • 1 Cup Spinach Chopped
  • Vegan Cheese
  • Salsa
  • Aioli Optional
  • 1/4 Cup Cooked Corn Optional
  • 1 /4 Cup Black or Pinto Beans

Instructions
 

  • Clean and chop up all the vegetables and set aside.
  • Slice the olives and set aside.
  • Prepare the nacho serving plate with the tortilla chips of your choice.
  • Drizzle the vegan cheese over all the chips, making sure to cover each chip.
  • Evenly spoon salsa onto the chips.
  • Next add all the chopped vegetables and olives on top of the chips.
  • If adding beans, now would be the time to sprinkle them over the chips.
  • Lastly, drop on little dollops of aioli (optional) on the top of the fresh vegetables and serve.
