This cool and refreshing Watermelon Cucumber Salad is the perfect side dish for any meal!
The sweet taste of the watermelon pairs perfectly with the cucumber and fresh herbs.
And to my surprise the balsamic vinegar adds the right amount of tang and saltiness that really balances out the sweetness of the salad.
Using fresh herbs in this salad adds even more flavor that compliments the watermelon and cucumber perfectly.
This is such a simple recipe that uses only a few ingredients that will make a huge impression on anybody who tries it.
Really you can’t go wrong with, what I call, a must have salad during the summer season!
What ingredients are in the salad?
- Watermelon – This sweet melon is in abundance during the summer months. The varieties are endless, and can be found with or without seeds. In this recipe I used a seedless watermelon. The sweet juicy flesh of this melon can be used in so many different ways. Eat it after cutting, or add it to so many different salads, grill it, use it in desserts, or even blend it into drinks!
- Cucumbers – This fruit pairs perfectly with watermelon in salads. The cucumber has a mild sweet flavor with a cool crisp refreshing texture that compliments any salad.
- Balsamic Vinegar – I used a dark balsamic vinegar in this salad. Balsamic vinegar has a lightly sweet rich tangy flavor that works so well with really sweet fruits and vegetables. I love the complex flavors that the balsamic vinegar added to this salad.
- Oil – The oil of my choice was avocado oil. I feel it does not overpower because of it’s mild buttery flavor. I wanted all the ingredients to be tasted in the salad without having something leave a lasting flavor.
- Fresh Herbs – The fresh herbs I used in this salad was pineapple sage and chives. But every time this salad is made I will try different herbs, such as mints, basil, or even dill. There is no limit to the fresh herbs that could work well in this salad.
- Seasonings – Just salt and pepper to taste.
How to make the Watermelon Cucumber Salad
Clean the watermelon and cucumbers.
Cut the watermelon into cubes, slice the cucumber into chips and add them to a medium sized serving bowl.
Measure and pour the oil and balsamic vinegar over the watermelon and cucumbers.
Clean and dice the fresh herbs and sprinkle over the fruit.
Add a little salt and pepper for taste.
Gently toss everything together and serve.
This salad will only keep for 2 days in the refrigerator, so enjoy it right away!

Ingredients
- 3 Cups Watermelon Cubed
- 1 Cup Cucumbers sliced
- 1 Tbsp Balsamic Vinegar
- 2 Tbsp Avocado Oil
- 1 Tbsp Pineapple Sage
- 1 Tbsp Chives
- Salt and Pepper to taste.
Instructions
- Clean the watermelon and cucumbers.
