This cool and refreshing Watermelon Cucumber Salad is the perfect side dish for any meal!

Ingredients
  

  • 3 Cups Watermelon Cubed
  • 1 Cup Cucumbers sliced
  • 1 Tbsp Balsamic Vinegar
  • 2 Tbsp Avocado Oil
  • 1 Tbsp Pineapple Sage
  • 1 Tbsp Chives
  • Salt and Pepper to taste.

Instructions
 

  • Clean the watermelon and cucumbers.
  • Cut the watermelon into cubes, slice the cucumber into chips and add them to a medium sized serving bowl.
  • Measure and pour the oil and balsamic vinegar over the watermelon and cucumbers.
  • Clean and dice the fresh herbs and sprinkle over the fruit.
  • Add a little salt and pepper for taste.
  • Gently toss everything together and serve.
  • This salad will only keep for 2 days in the refrigerator, so enjoy it right away!
