What makes the Magic in the Middle in these Vegan Magic in the Middle Cookies? It’s Peanut Butter!

Who doesn’t love peanut butter and chocolate, and let’s not forget Cookies!

This cookie is similar to classic peanut butter cup, but taste so much better, with the peanut butter filling wrapped in a crisp dark chocolate cookie.

Serve these cookies at any time of year and with your favorite hot or cold beverage.

Vegan Magic in the Middle  Cookies

Ingredients needed for these cookies

  • Flour – A all purpose flour was used in these cookies.
  • Unsweetened Cocoa Powder – The cocoa powder adds to the rick chocolate flavor and dark color of these cookies.
  • Baking Soda – The baking soda helps the cookie dough rise to give the cookies a crisp and chewy texture.
  • Salt – Salt enhances the flavor and sweetness but also decreases the bitterness of the dark chocolate.
  • Sugar – White sugar and brown sugar are used in these cookies. The brown sugar adds a caramel or toffee taste as well as more moisture. The white sugar adds just a bit more sweetness to the cookies.
  • Vegan Margarine – The margarine adds the fat, which gives the cookies a better taste.
  • Oil – I used a avocado oil for the extra fat in the cookies, which provides more flavor.
  • Egg Substitute – I used a powdered egg substitute in this recipe.
  • Pure Vanilla Extract – Vanilla extract will enhance all the other flavors in this cookie recipe.
  • Peanut Butter – In this recipe I only recommend using a creamy peanut butter.
  • Powdered Sugar – The powdered sugar is used with the peanut butter inside the cookies for a sweet and soft magical center.

Frosting (Optional)

  • Chocolate Chips – I used a semi sweet chocolate chip for the frosting of these cookies.
  • Peanut Butter – The peanut butter gives the extra creamy peanut taste to this frosting.

How to make these Vegan Magic in the Middle Cookies

Preheat the oven to 375°F.

Prepare two baking sheets with parchment paper, and set aside.

The Chocolate Dough

Mix the powdered egg substitute to the package directions and set aside for it to set.

In a medium sized mixing bowl, add and mix the flour, cocoa powder, baking soda, salt, and set aside.

Combine and blend, in a large mixing bowl, the sugars, oil, margarine, and 1/4 cup of peanut butter.

Next add in the vanilla, egg substitute, and mix until well combined.

Slowly add and blend the bowl of dry ingredients, set aside.

The chocolate dough should be crumbly, like in the picture below. The dough should stick together easy enough to form a ball.

The Peanut Butter Dough

In a small bowl, mix together the powdered sugar and the remaining 3/4 cup of peanut butter until smooth, set aside.

Time to make the Vegan Magic in the Middle Cookies

Break off about 1 Tbsp. of the chocolate dough and roll into a ball.

In the ball of dough, make a thumb indent into the center.

Break off about 1 tsp. of the peanut butter dough and roll into a ball.

Place the peanut butter ball into the indent of the chocolate ball.

Wrap the chocolate dough around and over the peanut butter filling. Roll the ball to smooth it out.

Repeat until both the chocolate and peanut butter dough are gone. If you have left over peanut butter dough, no problem use it for frosting your cookies.

Place the finished balls onto the parchment lined baking sheet, keeping the balls about 2 inches apart.

Using a drinking glass, flatten the cookie balls with the bottom of the glass to about 1/2 inch thick.

Place the baking sheet into the oven and bake for 5 minutes.

After 5 minutes, rotate the baking sheet and bake for another 5 minutes.

Baking times can vary, so make sure to watch the cookies closely.

Once the cookies are done, remove from the oven and let your cookies cool on a wire rack.

To frost or not to frost the cookies

Left over peanut butter dough? Make a frosting!

In a small bowl add the peanut butter dough and chocolate chips.

The amount of chocolate chips depends on the amount of peanut butter dough that is left over.

Place the bowl in the microwave at about 30 second intervals, be sure to stir at each interval.

After the frosting has melted, frost the cookies.
