Method
- Preheat the oven to 375°F.
- Prepare two baking sheets with parchment paper, and set aside.
The Chocolate Dough
- Mix the powdered egg substitute to the package directions and set aside for it to set.
- In a medium sized mixing bowl, add and mix the flour, cocoa powder, baking soda, salt, and set aside.
- Combine and blend, in a large mixing bowl, the sugars, oil, margarine, and 1/4 cup of peanut butter.
- Next add in the vanilla, egg substitute, and mix until well combined.
- Slowly add and blend the bowl of dry ingredients, set aside.
- The chocolate dough should be crumbly, like in the picture below. The dough should stick together easy enough to form a ball.
The Peanut Butter Dough
- In a small bowl, mix together the powdered sugar and the remaining 3/4 cup of peanut butter until smooth, set aside.
Making the Cookies
- Break off about 1 Tbsp. of the chocolate dough and roll into a ball.
- In the ball of dough, make a thumb indent into the center.
- Break off about 1 tsp. of the peanut butter dough and roll into a ball.
- Place the peanut butter ball into the indent of the chocolate ball.
- Wrap the chocolate dough around and over the peanut butter filling. Roll the ball to smooth it out.
- Repeat until both the chocolate and peanut butter dough are gone. If you have left over peanut butter dough, no problem use it for frosting your cookies.
- Place the finished balls onto the parchment lined baking sheet, keeping the balls about 2 inches apart.
- Using a drinking glass, flatten the cookie balls with the bottom of the glass to about 1/2 inch thick.
- Place the baking sheet into the oven and bake for 5 minutes.
- After 5 minutes, rotate the baking sheet and bake for another 5 minutes.
- Baking times can vary, so make sure to watch the cookies closely.
- Once the cookies are done, remove from the oven and let your cookies cool on a wire rack.
To frost or not to frost the cookies
Left over peanut butter dough? Make a frosting!
- In a small bowl add the peanut butter dough and chocolate chips.
- The amount of chocolate chips depends on the amount of peanut butter dough that is left over.
- Place the bowl in the microwave at about 30 second intervals, be sure to stir at each interval.
- After the frosting has melted, frost the cookies.
- Once the frosting has set, put them into a sealed container.
