These Stuffed Pita Pockets are a simple and easy cheesy treat.

Once baked, they are a crispy pocket full of veggies and a gooey cheesy filling.

Try these as a side to any soup, as a snack, or just enjoy them as the main meal.

These stuffed pita pockets are much like a thin calzone, which makes them easy to eat with little mess.

There is no need to make up the dough, just purchase your favorite pita pocket and fill them with your favorite toppings.

Stuffed Pita Pockets

Ingredients needed for this recipe

  • Pita Pockets – Use your favorite pita pockets.
  • Cheese – This can be a vegan shredded cheese or a regular shredded cheese.
  • Oil – Any oil can be used in these pockets, use your favorite oil.

Add in’s

  • Olives – Black and/or green olives.
  • Sun Dried Tomatoes
  • Sliced jalapeños
  • Onions – I like to use a raw green onion or chives for these pockets. For a little something different saute any onion of choice before adding to the pocket.

How to make the Stuffed Pita Pockets

Preheat the oven to 400° F.

Prepare a baking sheet with parchment paper, set aside.

Slice the pita pockets along the sides, half way through the pockets.

Place the pockets onto the baking sheet, and drizzle the inside of each pocket with your oil or choice.

Sprinkle the shredded cheese of your choice into each pocket.

Slice all the add in’s and sprinkle these into each pocket.

Next, brush a little vegan butter or oil over the tops.

Place the pockets into the oven.

Bake the pockets for 10 to 20 minutes, keep a close eye on the pockets so they do not burn.

Once the pockets have a slightly brown top, remove from the oven.

Cut the pockets into half or quarters and serve.
