These Strawberry Rice Crispy Treats are just as easy to make as the good old rice crispy treats that we all know and love.
The difference is that these are dairy free and gluten free, but still taste the same.
In these treats I added freeze dried strawberries with a couple drops of a lemon extract.
I love the combination of these together, the fresh clean flavors of the lemon with the tangy strawberries.
To me it gives these treats a strawberry lemonade flavor, reminding us of summer in the middle of winter.
Don’t like strawberries?
Why not switch it up with freeze dried blueberries or raspberries.
Chocolate or no chocolate?
With this recipe I didn’t drizzle or dip the treats into a chocolate, oh but wouldn’t that taste good!
A white or dark chocolate would compliment these treats nicely.
Ingredients for these treats
- Rice Cereal – I personally like to use an organic rice cereal for my treats, but any rice cereal can be used.
- Margarine – Use your favorite vegan margarine.
- Marshmallows – I used a full 10 oz. bag of a vegan marshmallow for these treats. These spongy little cylindrical pieces keep all ingredients together when melted.
- Strawberries – I used freeze dried strawberries for these treats. The freeze dried strawberries add a refreshing tang.
- Lemon Extract – The refreshing lemon extract enhances the strawberry flavor in these treats. Adding this lemon actually gives the treats kind of a strawberry lemonade flavor.
How to make Strawberry Rice Crispy Treats
Prepare a 8×8 glass baking dish with margarine and set aside.
Measure and pour the rice cereal into a medium sized mixing bowl and set aside.
Before opening the bag of freeze dried strawberries, crush the strawberries into small pieces and pour into the mixing bowl with the cereal.
In a medium sized sauce pan melt the margarine on a medium heat.
Add the marshmallows to the melted margarine, stir as the marshmallows melt.
Once the marshmallows are melted, add the lemon extract and stir.
Pour the marshmallows over the rice cereal and strawberries, stir until all the cereal is covered.
Spread the treats evenly into the prepared baking dish, set aside to cool.
Cut into squares and serve.

- 3 Tbsp Vegan Margarine
- 1 10 oz. Bag Vegan Marshmallows
