Strawberry Rice Crispy Treats

A dairy free and gluten free version of these old favorites.

Ingredients
  

  • 4 1/2 Cups Rice cereal
  • 2 oz. Freeze Dried Strawberries
  • 3 Tbsp Vegan Margarine
  • 1 10 oz. Bag Vegan Marshmallows
  • 2 Drops Lemon Extract

Method
 

  1. Prepare a 8x8 glass baking dish with margarine and set aside.
  2. Measure and pour the rice cereal into a medium sized mixing bowl and set aside.
  3. Before opening the container/bag of freeze dried strawberries, crush the strawberries into small pieces and pour into the mixing bowl with the cereal.
  4. In a medium sized sauce pan melt the margarine on a medium heat.
  5. Add the marshmallows to the melted margarine, stir as the marshmallows melt.
  6. Once the marshmallows are melted, add the lemon extract and stir.
  7. Pour the marshmallows over the rice cereal and strawberries, stir until all the cereal is covered.
  8. Spread the treats evenly into the prepared baking dish, set aside to cool.
  9. Cut into squares and serve.

Notes

Substitute the strawberries with blueberries or raspberries to change it up from time to time.
Dip or drizzle a white or dark chocolate with these treats.
