These crunchy, simple and sweet Refrigerator Pickled Vegetables compliment any meal.

I am pretty sure everyone has heard of and tasted bread and butter pickles at one time or another.

Not everyone loves those homemade sweet pickles, but if you are one that can’t get enough of these tasty pickles, this recipe is for you!

In this recipe I add different vegetables to my cucumbers, such as peppers and onions.

This adds to the flavor of the pickles as well as giving more texture and variety.

With the abundance of fresh peppers, cucumbers and onions our gardens, this couldn’t be a better time to whip up your own pickled vegetables.

What ways can you enjoy these pickled vegetables?

Add to your burger.

Dice the vegetables up and add to a salad, such as a egg salad.

Serve with crackers – Top your favorite cheese and crackers with these pickles and add a drop of mustard on top and enjoy! (YUM!)

Or just enjoy them right out of the container.

What ingredients are in these pickles

  • Sugar – The sugar adds the sweetness to the pickled vegetables.
  • Apple Cider Vinegar – I personally like to add apple cider vinegar to theses pickles. I love the slightly fruity taste of this vinegar, it is milder and lower in acidity, and adds a different flavor to the pickles.
  • Cucumbers – I like to use a mini cucumber for my pickles. With this recipe the cucumbers should not be peeled. Use the smaller cucumbers for the best results.
  • Peppers – In this recipe I used a bell pepper. Any color of bell pepper will work great.
  • Onion – Any variety of onion will work great in this recipe. I prefer to use a sweet onion for my pickles.
  • Seasonings – All that is needed is a little salt and celery seed.

How to make Refrigerator Pickled Vegetables

Clean and slice the onion, cucumber, pepper and place into a container. Set aside.

In a medium sized sauce pan, cook the vinegar, sugar, salt, and celery seed on medium heat until the sugar has dissolves.

Pour over the vegetables and stir.

Let the mixture cool.

Once everything has cooled, cover and refrigerate for 2 or more hours before serving.

Notes for this recipe

Notice that the liquid will not cover the vegetables completely, do not worry, the vegetables do add more liquid as they marinate.

My family thinks these pickles have the perfect taste and texture after they have marinated for 2 to 3 days, if you can keep them in the refrigerator for that long.

Ingredients
  

  • 1 Cup Sugar
  • 1 Cup Apple Cider Vinegar
  • 1 Bell Pepper The color of your choice. I have used red and green for my pickles.
  • 1 Medium Onion A sweet onion works the best. I have used a vidalia and red onion for my pickles.
  • 4 Cups Small cucumbers Not peeled.
  • 1 tsp Salt
  • 1 tsp Celery Seed
