A Mediterranean Bean Salad that is flavorful, full of fresh vegetables, protein, and fiber!

This salad has a homemade vinaigrette topped with hummus, beans, and sunflower seeds.

It is a quick, refreshing, and brightly colored salad that is great as a light meal or a perfect side salad.

In this recipe I used my own homemade hummus, my Creamy Lemon Hummus.

Don’t want to make your own hummus? Try the many different hummus brands available in your local stores.

I also love to add sunflower seeds to my salad, this can be switched out with slivered almonds, walnuts, or no nuts at all.

Mediterranean Bean Salad

Ingredients needed for the salad

  • Beans – Kidney and Butter Beans add more protein. You can switch out the beans for your favorites. I used canned beans for this recipe.
  • Leafy Greens – A blend of spinach, kale, and a green leaf lettuce are a great choice for this salad. Use all or just one of these leafy greens.
  • Tomatoes – Grape sized tomatoes work the best, but cherry tomatoes cut into quarters will work just as well.
  • Cucumbers – I used an English seedless cucumber in this salad. I love the crunchy and fresh taste of a cucumber in all my salads.
  • Onion – A sliced onion is optional.
  • Hummus – Store bought or a homemade hummus can be added to the salad.
  • Minced Garlic – Garlic is optional. The minced garlic is blended into the dressing.
  • Oil – Use your favorite oil in the dressing, I like to use avocado or olive oil.
  • Lemon Juice – You can use freshly squeezed lemon or bottled lemon juice as part of the dressing.
  • Balsamic Vinegar – This vinegar adds a dark, sweet, and tart flavor to the dressing.
  • Herbs – I have used both fresh or dried herbs in the dressing. Try oregano, basil, parsley, chives, cilantro, or any variety of mint.
  • Seasonings – Salt and pepper (to taste) added to the dressing.
  • Nuts – Optional. I love to add a salted sunflower seed to this salad. Other nuts to try: silvered almonds or walnuts.

How to made a Mediterranean Bean Salad

Drain and rinse the beans, set aside.

Then divide the fresh leafy greens into bowls, set aside.

Next, add the rinsed beans to each salad.

Continue by dicing the tomatoes, cucumbers, and onion into bite sized pieces, add to the bowls of greens.

In a small bowl, mix together oil, lemon juice, balsamic vinegar, minced garlic, herbs, salt, and pepper.

Next, drizzle the dressing over each bowl of greens.

Finish by topping off the salad with a large scoop of hummus, and sprinkle on a few sunflower seeds.

Enjoy the salad as a side or as the main dish.

Ingredients
  

  • 3 Cups Fresh Spinach Or any leafy green of your choice.
  • 1 Cup Cucumber
  • 1 Cup Grape sized Tomatoes
  • 1/4 Cup Onion Optional.
  • 1/2 Cup Butter Beans
  • 1/2 Cup Kidney Beans
Dressing
  • 3 Tbsp Lemon Juice
  • 3 Tbsp Oil I like to use either olive or avocado oil. Use your favorite oil.
  • 1 tsp Minced Garlic Optional.
  • Fresh Herbs of your choice. A few different herbs to try, oregano, basil, dill, chives, cilantro, or a mint of your choice.
  • Hummus One large scoop of hummus on each salad.
  • Sunflower Seeds Optional.

Method
