Mediterranean Bean Salad

It is a quick, refreshing, and brightly colored salad that is great as a light meal or a perfect side salad.

Ingredients
  

  • 3 Cups Fresh Spinach Or any leafy green of your choice.
  • 1 Cup Cucumber
  • 1 Cup Grape sized Tomatoes
  • 1/4 Cup Onion Optional.
  • 1/2 Cup Butter Beans
  • 1/2 Cup Kidney Beans
Dressing
  • 3 Tbsp Lemon Juice
  • 3 Tbsp Oil I like to use either olive or avocado oil. Use your favorite oil.
  • 1 tsp Minced Garlic Optional.
  • Fresh Herbs of your choice. A few different herbs to try, oregano, basil, dill, chives, cilantro, or a mint of your choice.
  • Hummus One large scoop of hummus on each salad.
  • Sunflower Seeds Optional.

Method
 

  1. Drain and rinse the beans, set aside.
  2. Divide the fresh leafy greens in to bowls, set aside.
  3. Add the rinsed beans to each salad.
  4. Dice the tomatoes, cucumbers, and onion into bite sized pieces, add to the bowls of greens.
  5. In a small bowl, mix together oil, lemon juice, balsamic vinegar, minced garlic, herbs, salt, and pepper.
  6. Drizzle the dressing over the greens.
  7. Top off the salad with a large scoop of hummus, and sprinkle on a few sunflower seeds.
  8. Enjoy the salad as a side or as the main dish.
