Method
- Drain and rinse the beans, set aside.
- Divide the fresh leafy greens in to bowls, set aside.
- Add the rinsed beans to each salad.
- Dice the tomatoes, cucumbers, and onion into bite sized pieces, add to the bowls of greens.
- In a small bowl, mix together oil, lemon juice, balsamic vinegar, minced garlic, herbs, salt, and pepper.
- Drizzle the dressing over the greens.
- Top off the salad with a large scoop of hummus, and sprinkle on a few sunflower seeds.
- Enjoy the salad as a side or as the main dish.
