These Maple Roasted Carrots are the perfect side dish to any meal!
Tender roasted carrots with a sweet caramelized sauce make this side dish perfect with anything and every meal you serve.
Because these carrots are so simple to make, they can be made and enjoyed any time of year!
Add them as a side dish to any winter or spring holiday meal.
Or enjoy them during the summer month with burgers, hot dogs or even other roasted vegetables.
To peel or not to peel? To slice or dice?
I personally like to peel my carrots, although if the carrot is cleaned well then I will not peel.
If you have a smaller carrot, it is alright to leave them whole, but for larger carrots, I like to cut them into bite sized pieces.
What other ingredients can be added to these roasted carrots?
Sprinkle a little cinnamon over these carrots before baking.
Add a 1 to 2 tsp of a mustard of your choice to the sauce to give the carrots a bit more tang.
Spice them up by adding a hot sauce of your choice to the sauce before tossing with the carrots.
You can also eliminate the onion powder and minced garlic.
Drizzle a little lemon or lime juice into the sauce before glazing the carrots.
Try different spices each time you make these roasted carrots, such as thyme, rosemary, smoked paprika, dill, basil or sage.
So much fun to customize these simply easy carrots!
What ingredients are needed for these delicious carrots
- Carrots – Any variety of carrot will work for this recipe. To peel or not, I leave that up to you.
- Real Maple Syrup – The maple syrup adds hints of vanilla and maple to the carrots. It also helps to give the carrots a slight crisp caramel layer.
- Oil – I used the mild flavored avocado oil in this recipe. Any oil you have on hand will work.
- Seasonings – Onion powder, minced garlic, salt and pepper.
- Sriracha Sauce – I added just a little sriracha sauce for a bit of spice, this is optional.

- Cinnamon
- Dill
- Lemon or Lime Juice
- Mustard
- Thyme
- Rosemary
- Smoked Paprika
- Sage
- Basil
How to make Maple Roasted Carrots
Preheat the oven to 425° F.
Prepare a baking sheet with parchment paper and set aside.
Clean and peel the carrots.
Slice the carrots, add to a medium sized mixing bowl and set aside.
In a small bowl add the maple syrup, oil, salt, pepper, onion, garlic, sriracha sauce (optional) and blend.
Drizzle the sauce over the slice carrots and stir until everything is coated.
Pour and evenly spread the carrots onto the parchment paper.
Place the baking sheet into the oven and bake for 35 to 45 minutes.
When the carrots are done they should be tender with a slight golden brown color.
Remove from the oven and serve immediately.

Ingredients
- 2 lbs Carrots
- 1/3 Cup Real Maple Syrup
- 1/4 Cup Oil I used avocado oil.
- 1 tsp Minced Garlic
- 1 tsp Onion Powder
- 1/4 tsp Sriracha Sauce Optional
- Salt and pepper to taste.
Instructions
- Preheat the oven to 425° F.
