Maple Roasted Carrots

Ingredients
  

  • 2 lbs Carrots
  • 1/3 Cup Real Maple Syrup
  • 1/4 Cup Oil I used avocado oil.
  • 1 tsp Minced Garlic
  • 1 tsp Onion Powder
  • 1/4 tsp Sriracha Sauce Optional
  • Salt and pepper to taste.

Instructions
 

  • Preheat the oven to 425° F.
  • Prepare a baking sheet with parchment paper and set aside.
  • Clean and peel the carrots.
  • Slice the carrots, add to a medium sized mixing bowl and set aside.
  • In a small bowl add the maple syrup, oil, salt, pepper, onion, garlic, sriracha sauce (Optional) and blend.
  • Drizzle the sauce over the slice carrots and stir until everything is coated.
  • Pour and evenly spread the carrots onto the parchment paper.
  • Place the baking sheet into the oven and bake for 35 to 45 minutes.
  • When the carrots are done they should be tender with a slight golden brown color.
  • Remove from the oven and serve immediately.

Notes

What other ingredients can be added to these roasted carrots?
 
Sprinkle a little cinnamon over the carrots before baking.
Add a 1 to 2 tsp of a mustard of your choice to give the carrots a bit more tang.
Spice them up by adding a hot sauce of your choice to the sauce before tossing with the carrots.
You can also eliminate the onion powder and minced garlic.
Drizzle a little lemon or lime juice into the sauce before glazing the carrots.
Try different spices each time you make these roasted carrots, such as thyme, rosemary, smoked paprika, dill, basil or sage.
