This Gluten Free Fruit Pizza is a wonderful treat for those hot summer days.

You can always count on this treat showing up at every family reunion or gathering.

It was made with a cookie crust, topped with a sweet and smooth cream cheese spread, and fresh fruit or berries organized perfectly on top.

Always everyone’s favorite and there was never any left over.

But being vegan and gluten free, I sadly could not enjoy this sweet treat, so I started to work on my own version of this family favorite.

My crust is made with oat flour, banana, and a plant based milk, making it gluten free, dairy free, and egg free.

The creamy cream cheese is made from raw cashews, blended together with other ingredients giving it a slightly sweet, tangy, and rich cream flavor and texture.

And then I topped it all off with my favorite seasonal berries.

My version is not only delicious, but also vegan, gluten free, and healthy!

And it is a perfect cooling summer time treat for everyone to enjoy!

Gluten Free Fruit Pizza

Ingredients needed for this Gluten Free Fruit Pizza

The crust

  • Oats – In this recipe I used quick or old fashioned oats.
  • Banana – The banana is the egg substitute for this crust.
  • Baking Powder – The baking powder increases the volume along with creating a lighter fluffier crust.
  • Plant Based Milk – I used an unsweetened vanilla flavored almond milk in the crust.
  • Vinegar – I like to use an apple cider vinegar in this recipe. The vinegar along with the baking powder create a lighter texture crust.
  • Pure Vanilla Extract – The vanilla extract adds just a hint of vanilla to the crust as well as enhancing the other flavors.

The cream cheese spread

  • Raw Cashews – The raw cashews are used to make the cream cheese. The cashews have a neutral flavor that will take on any flavor you add to them. The cream cheese will have a creamy smooth texture, perfect for spreading.
  • Plant Based Milk – I used an unsweetened vanilla flavored almond milk in this recipe.
  • Cornstarch – The cornstarch helps to thicken the cream cheese.
  • Vinegar – The apple cider vinegar adds a sour and tangy flavor to the cream cheese, basically giving it a similar flavor to a dairy cream cheese.
  • Real Maple Syrup – My sweetener of choice is maple syrup, it adds a sweet caramel smokey flavor to whatever you add it too.
  • Lemon Juice – Lemon juice adds a bright citrus flavor to the cream cheese.
  • Salt – To enhance the flavors.
  • Pure Vanilla Extract – The vanilla extract adds a hint of vanilla flavor to the cream cheese.

The fruit

I added fresh strawberries, blueberries, blackberries, and raspberries to my fruit pizza.

Have fun and try different fruit/berries each time you make this pizza, here are a few ideas,

  • Kiwi
  • Mandarin Oranges
  • Grapes
  • Any Melon, such as cantaloupe, honeydew, or muskmelon.
  • Peaches

How to make a Gluten Free Fruit Pizza

Making the crust

Preheat the oven to 425° F.

Prepare a baking sheet with parchment paper, set aside.

Peel and mash the bananas in a medium sized mixing bowl, set aside.

Pour the oats into a high speed blender, blend until the oats become a flour.

In the mixing bowl with the mashed bananas, mix in the oat flour and all the other ingredients until well combined.

Let the batter set for 5 minutes before pouring onto the lined baking sheet.

Spread the batter out to cover the baking sheet.

Place the baking sheet into the oven and bake for 15 minutes.

After 15 minutes, turn the baking sheet around in the oven and continue baking for another 10 minutes.

Check the crust after 10 minutes, it should have a nice brown color on both sides and along the edges when it is done.

Once the crust is done, remove from the oven, and leave to completely cool.

Making the cream cheese

Soak the raw cashews for up to 4 hours before making the vegan cream cheese.

After the cashews are done soaking, drain and rinse.

Pour the cashews into a high speed blender along with the milk, cornstarch, vinegar, lemon juice, salt, maple syrup, and vanilla extract.

Blend on high, until smooth and creamy, pour into a small sauce pan and cook on a medium heat for about 5 minutes, or until the cheese is the consistency of cream cheese.

Remove from heat, pour, and spread the cheese evenly over the crust.

Place this into the refrigerator for about an hour before adding the fruit.

While the pizza is in the refrigerator, prepare the fruit.

Topping the Gluten Free Fruit Pizza

Slice the strawberries into small pieces.

Clean and drain the other berries, set aside.

After an hour, pull the cooled pizza crust out of the refrigerator.

Sprinkle all the fruits evenly over the entire crust.

Cut the pizza into squares and serve cold.
