Method
The Crust
- Preheat the oven to 425° F.
- Prepare a baking sheet with parchment paper, set aside.
- Peel and mash the bananas in a medium sized mixing bowl, set aside.
- Pour the oats into a high speed blender, blend until the oats become a flour.
- In the mixing bowl with the mashed bananas, mix in the oat flour and all the other ingredients until well combined.
- Let the batter set for 5 minutes before pouring onto the lined baking sheet.
- Spread the batter out to cover the baking sheet.
- Place the baking sheet into the oven and bake for 15 minutes.
- After 15 minutes, turn the baking sheet around in the oven and continue baking for another 10 minutes.
- Check the crust after 10 minutes, it should have a nice brown color on both sides and along the edges when it is done.
- Once the crust is done, remove from the oven, and leave to completely cool.
Making the cream cheese
- Soak the raw cashews for up to 4 hours before making the vegan cream cheese.
- After the cashews are done soaking, drain and rinse.
- Pour the cashews into a high speed blender along with the milk, cornstarch, vinegar, lemon juice, salt, maple syrup, and vanilla extract.
- Blend on high, until smooth and creamy, pour into a small sauce pan and cook on a medium heat for about 5 minutes, or until the cheese is the consistency of cream cheese.
- Remove from heat, pour, and spread the cheese evenly over the crust.
- Place this into the refrigerator for about an hour before adding the fruit.
- While the pizza is in the refrigerator, prepare the fruit.
Topping the Gluten Free Fruit Pizza
- Slice the strawberries into small pieces.
- Clean and drain the other berries, set aside.
- After an hour, pull the cooled pizza crust out of the refrigerator.
- Sprinkle all the fruits evenly over the entire crust.
- Cut the pizza into squares and serve cold.
