A simple and easy to make French Onion Soup that is full of caramelized onions added to a rich vegetable broth.

This soup is not only hearty, healthy, and comforting, it is full of a rich sweet and savory flavor.

I know that french onion soup is kind of a acquired taste, not everyone is a fan, I certainly wasn’t.

It had been years since I tried french onion soup, since then my taste have changed, so I thought I would give this soup a try again.

And with me being a huge lover of cooked onions and, of course, soup, this soup was the perfect experiment.

I created a soup that is a deep golden brown color with rich, sweet caramelized onions which adds just the right amount of flavor to a simple broth.

Oh and the best part is topping the soup!

Ingredients needed for this soup

  • Onions – The onions I used in this recipe were a mix of yellow and red (or purple), use what you have on hand.
  • Oil – I used an avocado oil to saute the onions.
  • Vegetable Broth – Use your favorite vegetable broth for this soup.
  • Salt and Pepper – To taste.

Garnishing the soup

Add homemade croutons or a artisan bread of your choice on the side or on top of the soup.

Sprinkle your favorite plant based shredded cheese over the bread or soup and broil.

How to make French Onion Soup

Peel and slice the onions.

In a deep large sauce pan, on medium heat, add in the oil and onions.

At the beginning you will only need to stir the onions occasionally, as they start to brown, stir frequently to prevent burning.

This process can take anywhere from 30 to 45 minutes.

Once the onions are a rich brown, add the broth, salt and pepper.

Turn down the heat to a simmer, continue to cook for about 20 to 30 minutes.

Taste and adjust your seasoning.

Preheat the broiler and spoon a serving of soup into a oven proof bowl.

Top the soup with croutons or a slice of bread and sprinkle the cheese of choice over the bread/soup.

Place the bowl into the oven and broil for just a few minutes to a melted golden brown.

Ingredients
  

  • 3 Large Onions I used a mix of red and yellow, but use what you have on hand.
  • 1/3 Cup Avocado Oil Olive oil will work as well.
  • 4 Cups Vegetable Broth
  • Salt and Pepper to taste

  • Plant Based Shredded Cheese A white cheese of any variety.
